Cashew-Crusted Cod with Lemongrass Salsa & Coconut Cauliflower Rice

A crunchy cashew curry crust, vibrant lemongrass-cilantro sauce, and creamy coconut cauliflower rice make this protein-packed meal both nourishing and flavorful.

Cod
4 cod fillets (2–3 oz)

Cashew “Buttermilk”
1 cup cashew milk
1 tbsp lemon juice

Coating
1½ cups raw cashews
1 tsp salt
¼ tsp cayenne
¾ tsp garlic powder
1½ tsp curry powder
1½ tsp smoked paprika
3 tbsp arrowroot or cornstarch

Directions
Preheat oven to 400°F. Mix cashew milk and lemon juice; let sit 5 min. Soak cod briefly. Pulse coating ingredients into a coarse meal. Place cod in a greased baking dish and coat tops evenly. Bake 18–20 min until fish flakes easily.

Lemongrass-Cilantro Sauce
1 cup cilantro
1 stalk lemongrass, chopped
1-inch ginger, chopped
2 garlic cloves
1 tbsp rice vinegar
1 tbsp water
1 tbsp sambal oelek
¾ tsp salt
¼ tsp coconut sugar
¼ cup olive oil

Pulse cilantro, lemongrass, ginger, and garlic. Add vinegar, water, sambal, salt, and sugar. Blend while slowly drizzling in olive oil until smooth.

Coconut Cauliflower Rice
1 head cauliflower (or 4 cups cauliflower rice)
1 tbsp coconut oil
1 tsp coconut sugar
½ tsp salt
¼ cup full-fat coconut milk
2 tbsp cilantro

Pulse cauliflower into rice-sized pieces. Heat oil in a skillet. Cook cauliflower with salt and sugar for 5 min. Stir in coconut milk and cilantro.

To Serve
Plate cauliflower rice, top with cod, and finish with lemongrass sauce.

Tips: Keep cashews slightly coarse for the best crust. Frozen cauliflower rice works well. Sauce keeps 3–4 days refrigerated. Also delicious with halibut or haddock.

Our Yoga for Mental Health Certification at Thrive Carolinas is more than a yoga training. Participants will also receive QPR Gatekeeper Certification, learning practical su***de prevention skills and how to support life-saving conversations with compassion and confidence.

Because sometimes healing begins with simply knowing how to hold space, listen, and connect someone to help.
