Wanted to get a new brunch item put together. So started with a duck and then ended up making some duck boudin sausage, seared it all around using the fat rendered down from the skin from the butchering process. Put that with some Jimmy Red Grits using the duck stock from this duck and then sauced it up with a golden sherry emulsion. Needed some heat so added our house sriracha and then some herbs & leaves from our garden out back.
