Tropical Island banana bread (that’s what people call it, I didn’t name it this 🤣). It’s one of the best I’ve ever had and the coconut just takes it over the top 😋
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup brown sugar packed
2 large eggs
1/2 cup vegetable oil or melted coconut oil
1 teaspoon vanilla extract
1/4 cup crushed pineapple drained
1/4 cup shredded sweetened coconut
3 medium ripe bananas mashed
Bake @350 for 40-50 mins for loafs
19-20 mins for muffins.

Puteni, Puligi, Purini ❤️ I hope you enjoy this Recipe you can share with your family this holiday season.
RECIPE:
Sugar syrup: (on medium heat)
1 cup granulated sugar (melt down then add hot water)
1 cup hot water
-Remove from heat then add vanilla and coconut milk
1 tsp vanilla
1 can coconut milk

Dry:combine in 1 bowl
4 cups of flour (regular white flour)
3 tsp baking soda
1 tsp baking powder
1 tsp ground nutmeg
1 tsp ground cinnamon
1/4 tsp ground cloves (optional)

Wet: combine in separate bowl
1 cup of melted butter (or 2 sticks)
1 cup granulated sugar
( add 3 eggs- optional)
Steam for 1 hour and 20 mins on high.
I used a steamer pot but you can also fill a pan half way with water and place your foil covered Puteni in it and bake at 350 for 1 hour and 20 mins, depending on how hot your oven gets just make sure to check it.

This is how I make my Custard:
1/2 cup of custard
2 1/2 cup of milk
(Whisk together before placing in pot over medium heat)
Continue to whisk until thickens then add sugar.
1/2 cup of sugar
(You can add more milk or water if you want it less thick)
