Heronmark is a brewery and winery in Allegan, Michigan. Ben and I (Katelyn) are married and are the brewer and winemaker, respectively. Our quest is to reconnect with the land, farming, and traditional techniques of fermentation while incorporating modern knowledge and science. This has led us to grow grapes and hops at our home organically and to employ traditional practices such as fermenting all of our products in wood.
For beer, we specialize in lagers, saisons, wild fermented, and aged beers. For wine, we specialize in wines made from American grape varieties and other locally abundant and delicious ingredients such as maple syrup, apples, blueberries, honey, elderberries, cherries, and mulberries. Weโll also be offering some robust charcuterie boards featuring Michigan producers including vegetarian, gluten-free, and vegan options.

Our maple season is soon coming to an end. We are so thankful for everyone who participated and the successful work that could be done! Our next tasks are bottling and labeling. Next year we hope to give tours of the sugar shack for groups or families!

We are right on course to be making plenty of syrup this year! Maple syrup undergoes several important steps before it reaches your table. Here's a picture of the step right before we filter our syrup. Joel is mixing in Diatomaceous earth which is an organic material made from the fossilized remains of tiny aquatic shells. It is extremely porous which is perfect for collecting minute sediments in the syrup.

The other day we had a successful start to our maple season with our annual pancake breakfast. A lot has happened this past year but we were so thankful to still share this moment with the parents, kids, and friends who help make Great Lakes Maple operate!
