Onion Poppy Seed Bialy
These are like bagels, but not bagels at all. The dough is very similar,but these are not boiled like bagels and there is no hole. There is an indentation often filled. Mine are filled with yummy sweet and delicious carmelized onions sprinkled with poppyseeds. Such a treat. My kids enjoy these with scrambled eggs and bacon for breakfast. I adore these with cream cheese and smoked salmon. Super delish breakfast.

Chicken Marbella
 The odd list of ingredients  combines to make  an amazing  sauce similar to some Asian dishes we eat. A sweet tangy garlicky perfect sauce begs to be sopped up with bread. Make sure you leave enough time to marinate overnight. This step completely  changes the flavor of the chicken snd ensures every bite is infused with flavor.

 
INGREDIENTS
•3 to 3 ½ pounds bone in skin on chicken legs and thighs
•8  large cloves garlic; finely minced
•1 ½ tablespoons dry oregano
•½ teaspoon salt
•¼ teaspoon ground black pepper
•1/2 cup red wine vinegar
•1/2 cup extra virgin olive oil
•1 mounded cup pitted prunes, cut in half
•1 cup green Castelvetrano olives.
•¼ cup capers with a little liquid
•4 bay leaves
1/4 to ½ cup brown sugar ( we use closer to 1/4)
•½ cup dry white wine. I used a chardonnay
•3 tablespoons chopped parsley.
Instructions:
▪︎ Place chicken pieces in a zip lock gallon size bag.
▪︎In a small bowl mix garlic, oregano, salt, pepper, red wine vinegar, olive oil, prunes, olives, capers, and bay leaves.
▪︎Mix and pour over chicken. Seal the bag and marinate overnight.
▪︎(The next day) preheat the oven to 350°
▪︎Place the chicken pieces in a shallow baking pan and pour marinate over chicken and let olives and prunes with spices fall around the chicken pieces.
▪︎Sprinkle the brown sugar over the chicken, pour the wine around the outside of the chicken.
▪︎Bake uncovered for 60 minutes, basting every 15 minutes. Chicken should read 165° on an instant read thermometer when done.
▪︎Place chicken under the broiler for a few minutes to crisp the skin but be careful not to burn.
▪︎Remove to platter and spoon prunes, olives and capers over chicken. Sprinkle with chopped parsley and serve cooking juices on the side to dip chicken and crunchy bread .

Leftover Mashed Potato Cheesy Ham Waffles
Leftover mashed potatoes become an amazing preprepared ingredient that transforms into crispy crunchy delicious savory potato waffles. My kids like the leftover meal of potato waffles more than the original meal!

•2 Tablespoons vegetable oil
•1/4 cup buttermilk or soured milk made with 1 tsp white vinegar and •1/4 cup whole milk 
•2 large eggs
•2 1/2 cups leftover mashed potatoes
•3 chopped scallions green and white
••1 cup shredded extra sharp cheddar cheese
•1/4 cup minced ham
•1/2 cup all-purpose flour
•1/2 teaspoon baking powder
•1/4 teaspoon baking soda
Seasoning as desired
•Sour cream as desired 
▪︎Preheat a Belgian waffle maker spray it with nonstick spray.
▪︎In large bowl, stir together oil, buttermilk and eggs mashed potatoes, scallions, ham and cheese until well combined. Stir in flour, baking powder and baking soda and any seasoning you desire. I used a sprinkle of cajun and some black pepper.
▪︎Scoop 2/3 cup  of the mixture into the prepared Belgian waffle baker, spreading it into an even layer leaving room at the edges. Close the lid and let the waffle bake until golden brown and the egg is cooked throughout. Move waffle to a serving plate then repeat until all potato mixture done
▪︎Serve the waffles with sour cream and garnish as desired.

Slowcooker 3 Packet Pot Roast 
We had sports and errands all day. This is an easy family favorite everyone loves. A perfect delicious easy slowcooker roast like this one cooking all day meant dinner was ready when we were with very little effort. I use lower sodium packets or homemade versions to control the salt, feel free to use what you have and enjoy. I served with steamed veggies, carrots I threw in with the meat and mashed rutabaga. 🙂

Ingredients
•2 to 3 pounds boneless Rump Roast, bottom round roast for sliceable roast or chuck roast for shredded meat.
•1 packet (0.87 ounce)  lowered sodium Brown gravy mix
•1 packet (0.7 ounce) Italian Seasoning  and dressing mix ( I use a lower sodium mix)
•1 packet (1 ounce) Ranch dressing/seasoning mix
•1 & 3/4 cups water
Instructions
▪︎Place roast in a large greased slow cooker 
▪︎Mix  all 3  packets  and the water. Pour evenly on top of roast. 
▪︎Cover with lid and cook on low heat 8 to 12hours.
▪︎Shred Or cut roast  against yhe grain. Serve over  rice, potatoes or noodles and the gravy the roast creates as it cooks. Add veggies as desired.

The surprise star of our dinner was Carrot Rice. A simple rice pilaf made with fresh veggies, seasonings and basmati rice. It was absolutely delicious The recipe is a keeper. It can be found on Instagram . Thank you for this delicious dish.

Turkey Taco Stuffed Baked Potatoes.
Unlike a flour tortilla or 2, the baked potato is filling, full of vitamins, minerals and fiber. Perfect to fuel my Junior Olympian synchro swimmer. I also like that my one child who didn't want taco fixings easily switched things up and he had a cheese and broccoli potato. Super easy delish dinner we all love.

Super inexpensive takeout fakeout that uses up veggies in the crisper drawer. The veggies I already had and Im happy to use them.. The kung Pao...Its only 5.99 friends!!!!! My giant bag of jasmine rice is cents a serving and I always make extra for fried rice later in the week.
Trader Joes frozen kung pao chicken for the win!!
To reduce the sodium, I use half the sauce. I add their tiny bag of frozen peppers and onions along with lots of my own veggies. Scallions , broccoli, cabbage, snowpeas, carrots and a yellow bell pepper. I serve over steamed Jasmine rice. I think its as delish as my favorite takeout place Fu-sing. This serves 5 to 6 very generous portions with all I added. This is about the same as 2 fu-sing orders so around 30 bucks there compared to my 6-8 dollar dinner for my family.

Basic White Sandwich Bread
Making bread in a bread machine is extremely easy. Nothing beats the ease of throwing ingredients in the machine and pushing the start button. A few hours later you have a delicious amazing hot loaf of bread.
This particular recipe is great because it does not have perishable ingredients, so it is safe to use with the timer. Literally put ingredients in the machine before bed, set the timer, push start and you wake up to fresh baked bread.
A question I get often is why nonfat dried milk.
Milk is added to bread for flavor, a tender crumb and well-colored crust. You can substitute fluid milk in the same quantity if thats all you have.
Dry milk is used because it easy to store and easy to use in bulk. Milk also contains an enzyme called glutathione which can weaken gluten and result in a poorer quality loaf - the drying process destroys this enzyme. Dry milk is really the way to go if you are going to bake often, which you should!! This bread is delish !


Basic Loaf of White Bread- 2 lb

( for bread machine)

Ingredients:

• 1 1/2 cups water

• 1/3 cup nonfat dry milk

• 1 1/2 teaspoons salt

• 2 tablespoons granulated cane sugar

•2 tablespoons vegetable oil

• 3 1/2 cups bread flour

• 1 tsp bread machine or instant yeast.

Directions:

•Put in bread machine pan in order given. When you get to yeast, make a small well with your finger in the flour and pour yeast in well.

• Secure pan into bread machine. Follow directions for basic loaf. Select crust darkness. Push start.

• When bread machine is done baking. Carefully remove pan with oven mitts. Turn out on cooling rack. Bread paddle may stick in loaf. If it does let loaf cool before removing.

• Store bread in a plastic bag or container. It has no preservatives and will get stale quicker than store bought bread.

Use up your holiday leftovers. Food is too expensive to waste! Instead recreate. Use leftovers as prepped ingredients. Crudite veggies. Bell peppers, broccoli, cauliflower, carrots mixed with leftover cooked,chilled beautiful jumbo pink shrimp and sliced onion all stir-fried together with hoisin sauce. Beautiful easy healthy delicious restaurant quality meal.

Thai- Inspired Chicken noodle soup
My 13 yr old is the chef.❤
This cozy bowl of soup has delicious thai flavors and it hits the spot on a chilly wet winter night. Don't let the ingredients scare you. Everything is from my regular grocery. The red curry paste, fish sauce and rice noodles can be found in the asian foods isle. The curry paste isn't spicy. The fish sauce once added, is not detectable. This is delicious. The coconut milk adds a beautiful creamy flavor but doesn't make the soup sweet or coconut flavored. The rice noodles are light and perfectly slurpable fun. We doubled everything but the chicken &coconut milk tonight.
Enjoy.

Ingredients:
• 2 big chicken breasts (~1.5 lb)
• 1 tbsp olive oil
•1 Cup shredded carrots
• 1 medium yellow onion sliced
•1 medium red bell pepper sliced
•3 cloves garlic pressed
• 1 tsp fresh grated ginger
• 6 cups low sodium chicken broth
• 1 14 oz can full fat coconut milk
• 2 tbsp red curry paste
• 1 tbsp fish sauce
• Salt and pepper to taste
•4oz rice noodles broken if desired
•Garnishes: cilantro, sliced scallions, lime wedges
Directions:
▪︎ Pour broth into a large pot add chicken bring to a boil turn down to simmer cover and cook until chicken is tender. Once tender, take chicken out to a plate. When cool enough to handle, shred in big shreds.Add back to broth.
▪︎ In a small skillet over medium-high heat add the oil, carrots onion and peppers.saute until tender add garlic and ginger cook 30 seconds more. Add all this to pot with broth.
▪︎ Add coconut milk, curry paste, fish sauce salt and pepper to taste. Bring soup up to a boil add noodles. Cook 3 minutes.Turn off heat let sit 5 minutes covered.
▪︎ Serve soup immediately garnished with a big wedge of lime to squeeze in soup, cilantro for those who like it and or scallions in each bowl.

15 Minute Bulgogi Turkey Bowls
This hits the spot for a delicious takeout fakeout meal. I used ground turkey instead of thinly sliced bulgogi beef. This make the dish a 15 minute meal!. I microwaved rice and steamed broccoli for a super easy takeout fakeout that the whole family loved.


 15 minute Bulgogi Flavored Turkey Bowls
INGREDIENTS:
•1/2 cup brown sugar, packed
•1/2 cup reduced sodium soy sauce
•4 teaspoons sesame oil
•1/4 teaspoon crushed red-pepper flakes, or more to taste
•1/2 teaspoon ground ginger
•2 tablespoons vegetable oil
•3 to 5 cloves garlic, minced
•2 pounds ground turkey
•4 green onions, thinly sliced
•1 teaspoon sesame seeds
:DIRECTIONS:
▪︎In a small bowl, whisk together brown sugar, soy sauce, sesame oil, red pepper flakes and ginger.
▪︎Heat vegetable oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground turkey and cook until browned, about 3-5 minutes, crumbling  the turkey  as it cooks; drain excess fat.
▪︎Stir in soy sauce mixture and green onions until well combined, allowing to simmer until heated through, about 2 minutes.
▪︎Serve immediately, garnished with  extra green onion and sesame seeds, if desired. Serve  over rice.

My 13 year old made dinner .
She picked her favorite. Twice Baked Loaded Potatoes. Easy, not expensive at all, delicious restaurant quality without the resturant price.

Oil washed and dried big russett potatoes, sprinkle with kosher salt and bake on a foil lined tray at 425° for 60-70 minutes. Cool just enough so you can handle the potatoes. Cut potatoes in half scoop the insides out keeping the potato skin "shells" intact and leaving an edge of potato attatched to skin. Place the scooped out potato in a bowl and add your favorite potato fixings . We added chopped crisp low sodium bacon, sliced scallions, salt, pepper, shredded low fat cheddar, greek yogurt and a few dollops of bison chip dip since we were low on sour cream/ yogurt. Rough mash the filling together. Place evenly in potato skin shells. Top with more cheddar, scallions and bacon as desired. Broil until tops are golden. These are absolutely delicious 😋
