Meet this week’s fresh cookie drop: The Cannoli Cookie! 🍪🇮🇹

We took everything you love about a classic Sicilian cannoli and packed it into a sandwich cookie. We start with a rich, soft-baked citrus olive oil cookie infused with bright orange zest, then stuff it high with whipped, sweet ricotta cream and studded it with mini chocolate chips.

Crispy edges, pillowy soft center, and just the right touch of citrus to balance that sweet ricotta filling.

​Every single prickly pear that goes into our small-batch brews is 100% hand-harvested by Laura and Jason at our family’s ranch in Cameron, TX. No artificial purees, no mass-produced extracts—just native Texas ingredients grown, picked, and prepped by the same people who brew your pint.

​Why the flamethrower?

If you’ve ever handled prickly pear, you know about glochids—those microscopic, brutal little spines that stick to everything. Before we can juice the fruit, we lay them out and hit them with a torch to burn off every last spine. It’s equal parts science, safety, and pure satisfaction.
