Finally tried Sourdough Bagels and they were amazing!! Light and fluffy. They made the best sandwich. Lightly toasted after freezing, the inside was still light and the outside has a nice chewiness.

Continuing my journey of switching to all fresh-milled flour for our family. For the pictured loaf I followed recipe. I used hard white wheat, Khorasan, a very small amount of Spelt, plus 1/2 t diastatic malted barley flour (helps with rise and crumb texture).
Never be afraid to step into new things when making better choices for your family. … it’s definitely worth the extra time effort and does takes commitment !!

I’m so excited that I’m learning how to work with sourdough! This loaf is 50% organic All Purpose flour and 50% fresh milled hard white wheat.
It’s taken some time to find a method that produces a light fluffy crumb and crispy crust. So delicious, satisfying and nutritious. We can’t get enough!

Confession time: I put off learning to make rustic sourdough loaves because I just didn’t think they were for me. Too crusty. That odd shape - sandwich loaves are more what we’re accustomed to right?! They take more time - stretching, folding, shaping … etc.
Finally gave it a go and LOOK at the results!! It was so exciting to succeed. It is crusty on the outside but so soft on the inside. And … it makes the best sandwiches … toasted sandwiches … in a pan with a little butter of course … OMG!!!
Thanks to Lisa for sharing her recipes. Every one that I’ve tried has be amazing.
