We’re so very honored to introduce Québec’s WILLS brewery to the city of New York!

Launched in 2023 from the Mile-Ex neighborhood of Montréal, WILLS has quickly honed their art of brewing & serving precisely-balanced, honest beer of delicious character. Celebrating 13 Years of Tørst
this Sunday, May 17th

featuring a full line-up of gems from the great :

Amenable (4.2% abv) English-inspired bitter brewed with English malt, lightly-cooked invert sugar, and Challenger and Goldings hops; each can is dosed with nitrogen to emulate the creamy foam of a traditional Northern UK cask pour—we like it best from a stein! These special collab steins will be available from noon this Sunday the 17th! (Limit 2 pp; unfortunately we can’t accommodate special hold requests, nor can we ship. Hope to see you Sunday!)

Backroads (5.6% abv) Country beer made with sumac and tangerine marigold

Be Golden (4.2% abv) English-inspired bitter brewed with Maris Otter malt and pale invert sugar syrup; hopped with UK Fuggle, Kent Goldings, Styrian Celeia, and US Centennial; also canned with nitrogen

Bones Shirt (4.9% abv) German-style black lager

Crispy Little (4.8% abv) American pale ale brewed with malted wheat

Fine Line (4.5% abv) Hop-accented Kölsch-style ale

Hecto (4.6% abv) Pale ale dry-hopped with Citra

Kinda Classic (4.5% abv) Belgian-inspired ale fermented with a single strain of yeast and bottle-conditioned for spritzy carbonation

Palatine Pils (4.9% abv) The Suarez Family house pils

Poet’s Walk, 2020 - 2023 (10% abv) English-style barleywine brewed in late 2020 and lagered in stainless until spring of 2021, then bottle-aged for 5 years

Proclivity (5.4% abv) Country beer brewed with fresh pineapple sage from

Qualify Pils (5.2% abv) Hop-accented German-style pilsner made with Hallertau Mittelfruh and Hallertau Saaz

The flavors of this year’s Zwanze beers are as much of the Jura region of France as they are of Brussels and that’s thanks to Florian, Paul, and Vincent of

Four years ago these fellas started making vermouth the traditional way using grapes of the Jura (Pinot Noir, Poulsard, Chardonnay) as a base and more than 70 different plants (mostly sourced from the Jura, of course) to bolster the intrinsic profiles of the grapes themselves into four different vermouth expressions, greater than the sum of their parts. Cantillon’s Jean Van Roy was so very impressed by these elixirs and of course saw blending potential with spontaneously-fermented brews and voila! the next experiment in this lauded Zwanze lineage took form!

After many tastes & many chats, the Sullivan boys made two different elixirs meant to blend well with Lambic and Kriek, respectively:

“Artémis La Blanche” is an elixir made from gentian, coriander, rhubarb root, juniper, sage, angelica, wormwood, and many other herbs, blended with Cantillon Lambic

“Artémis La Rouge” is an elixir made from verbena, marjoram, rose, apple, curry plant, wormwood, and many other herbs, blended with Cantillon Kriek

Pictures are from my visit to the Jura this past January: Florian w/ his vermouth at .levain , barrels of Bénédicte and Stéphane Tissot wine, made from the same grape varietals Sullivan uses for their vermouth, and a bottle of La Vie est Belge, lambic aged in Tissot vin jaune barrels

LoLa Weekend @ Tørst (4/9 - 4/12)

We’re excited to welcome Laura and Mark of Lower Lake Brewery in Hamilton, New York, back to their old Greenpoint stomping grounds on Thursday, April 9th, to kick off a full weekend with their deliciously sessionable lagers & ales @ Tørst

It’s rare for such a young brewery to come out of the gate with a complete lineup of nuanced, characterful beers, especially when those beers are some of the most difficult styles to brew well. Laura and Mark have done exactly that but the whole truth is that it was neither easy nor quick: Mark’s been brewing since 2013–around the same time the couple met—and one of he and Laura’s core values is time: give the lagers time, give the brand time, give the community time. They make decisions slowly and carefully and boy, you can taste it

Come and taste for yourself and chat up Laura & Mark about their big pandemic-era move upstate, their old world lager inspirations, their appreciation for what good art can do for good beer, etc., wherever the path might lead
