Three more from our summer fruit balsamic lineup worth knowing.
Mango — tropical and bright, with the acidity of a fine balsamic keeping the sweetness in check. Drizzled over grilled shrimp, tossed with avocado, or used as a glaze, it brings a summer flavor note that nothing else quite replicates.
Raspberry — the boldest of the fruit balsamics. Tart, vivid, and assertive in the best way. It cuts through rich dishes beautifully — dark chocolate, duck, a cheese board that needs a bright counterpoint.
Apricot — delicate and warmly fruited with a slightly floral finish. One of the most surprising on first taste. Drizzle it over roasted carrots still warm from the oven, or spoon it alongside fresh goat cheese and watch it disappear.

Father's Day is this Sunday. Here is what we would put on the grill.
Ribeye — brushed with Olive Wood Smoked Olive Oil before it hits the grates, finished with a pinch of flaky salt. Nothing else required.
Chicken thighs — marinated overnight in Neapolitan Herb Balsamic, olive oil, and a little garlic. Grilled low and slow until the edges catch.
Ribs — rubbed, smoked, and glazed in the final minutes with Hot Honey Vinegar Balsamic. The glaze sets just enough to lacquer without burning.
Grilled corn — Baklouti Green Chili Pepper Olive Oil brushed on while still hot off the fire. Bold, simple, and the first thing to disappear.

Some balsamics are bright and summery. These two run a little deeper.
Fig Balsamic — lush, complex, and savory-sweet in a way that makes everything around it taste more intentional. A wedge of aged manchego, a few walnuts, a drizzle of fig balsamic. That is the whole recipe. It is the one that converts people.
Black Cherry Balsamic — rich and deeply fruited, with the most wine-like finish of our entire fruit lineup. It belongs on a charcuterie board, over roasted beets with goat cheese, or drizzled warm over vanilla ice cream on a summer evening.

Eight aged fruit balsamics, each crafted in the tradition of Modena, Italy — and every one of them is on our shelf right now, ready to taste.
A few worth knowing this week:
Blueberry — deep and jammy with a quiet tartness underneath. Exceptional in a vinaigrette or glazed over pork.
Strawberry — bright, sun-ripened, and unmistakably fresh. The strawberry caprese it makes is one of the best things we pour all summer.
Peach — delicate and honeyed, with a warmth that feels like the height of the season. Brush it on pork in the last few minutes of grilling and watch what happens.
