the field tomatoes were destroyed by the recent hail storm but the green house tomatoes are doing great. Took 40 cartons to the market on Saturday.

I am often asked at the farmers market what I do with the soil in the trays that the microgreens are grown in. It goes to the compost pile. Then when it comes time to do field planting in the spring the compost is used when planting the starts.

Questions From Customers At The Farmers Market:
This past Saturday the Boulder County Farmers Market opened. The weather was great for the opening day. When I go to the market I bring many trays of microgreens that I cut fresh for my customers right there at the market. Since they see me cutting their order one of the questions they often ask is "will they grow back?" The reason why microgreens are so nutrient dense is because they are cut within 10-12 days of growth from planting the seed. All the nutrition that is packed in each seed is now in the microgreens I am cutting for them. Once cut anything that grows after will not be nutrient dense. So there is only one cutting and then the tray goes to the compost pile.
When customers order home delivery, the day of delivery I get up early and cut the orders. Their microgreens are also cut fresh the day of delivery.

In a previous post I mentioned how research shows that sunflower sprouts can reduce the formation of advanced glycation end products (AGEs). High levels of AGEs have been linked to the development of many diseases, including diabetes, heart disease, kidney failure, and Alzheimer’s, as well as premature aging. An active ingredient contributing to the observed effect has been identified as cynarin (1,5-dicaffeoylquinic acid). Cynarin is a flavonoid. Flavonoids are a group of natural substances found in fruits, vegetables, grains, bark, roots, stems, flowers, tea and wine. These natural products are well known for their beneficial effects on health. Currently there are about 6000 flavonoids that contribute to the colorful pigments of fruits, herbs, vegetables and medicinal plants. The sunflower sprout is a rich source of cynarin and it is the major sprout in our Farm Sampler microgreen box.

When protein or fat combine with sugar in the bloodstream harmful compounds called advanced glycation end products (AGEs) are formed. This process is called glycation.
High levels of AGEs have been linked to the development of many diseases, including diabetes, heart disease, kidney failure, and Alzheimer’s, as well as premature aging.
In one study that examined the antiglycative properties of four edible sprouts popular in Chinese markets it was found that the sunflower sprout Helianthus annuus exhibited the strongest inhibitory effects against the formation of advanced glycation end products (AGEs).
