Zoodles! Aka zucchini noodles, a great carb-free option for pasta dishes such a shrimp scampi! They hold their shape and each zucchini makes quite a large amount of zoodles!

Today's menu:
- beef lasagna with spinach and onions, cream cheese ricotta filling.
- buttery green beans
- marinated lemon garlic salmon filets
- egg noodles (their absolute favorite!)
- roasted brown sugar mustard carrots
- broiled asparagus
- pork goyza potstickers
- chicken teriyaki stir fry with broccoli, carrots, onion, red peppers, edamame and snap peas
- fluffy jasmine rice
- hard boiled eggs
- baked potatoes
- cut mango
Guess in the comments how long today's menu took, with clean up of course!

Empanadas two ways! Pulled chicken with charred poblano peppers, and beef with green peas. Both also have onions and fire-roasted tomatoes, with lots of spices!
Mixed organic cheddar into each batch before assembling and finished them off with a garlicky egg wash before baking.
They came out GREAT! 🤌

Sometimes my clients request snacks like these organic power balls for the kids because they're guaranteed NOT to contain hydrogenated oil, high fructose corn syrup, modified corn starch nor artificial ingredients etc... It's a crazy time to be alive where we have to read food labels on even the "simplest" of things to avoid such toxic things.
Companies are changing their recipes to cut costs (skimpflation) and reducing size of their product while raising prices (shrinkflation). It's unfortunately all about money and many small brands have sold out to mega corporations like Nestle, Kellogg etc. We only have the illusion of choice. Just so disappointing .
BUT it fills me with joy to provide healthy and delicious nutrition for my clients and their kids! We do what we can in these crazy times!

I use a piping bag (or ziplock bag with the end cut) to fill each muffin with peanut buttery goodness!

Chicken teriyaki stir fry!
Sometimes my clients like it with rice on-the-side, but this time it was requested all tossed together!
Teriyaki sauce is easy to make but my secret is the Soyaki sauce from Trader Joe's, it's amazing!
