If your starter bubbles and rises but still seems weak, overly acidic, or liquidy, and your loaves turn out dense or gummy, it may be underfed.

A 1:1:1 feeding ratio (equal parts starter, flour, and water) is fine if you want a quick rise to bake ASAP. But for regular maintenance, it’s usually not enough — even in a cool kitchen.

Try a 1:2:2 or 1:3:3 ratio instead. More food = happier yeast, a slower peak, longer-lasting activity, and taller, better-rising bread.
