Between the Trees is a micro-bakery in the heart of the High Country in Boone, NC.
We bake naturally leavened breads made from organic locally and regionally grown grain with a long, cold fermentation for flavor and digestibility.

Ran a little late this morning, but we did have Veggie Pesto Danish + a Peach Danish (that has 7 layers if you include the mint garnish- touchy subject lol)
Also we have an OG bread head, Dylan, working the register on Saturday's (he graduated waiting in bread like school) so yall be nice to him 👊 (literally everyone was nice though)
Thanks for everyone's patience this morning as we scrambled around 😚🤗

People really are liking the Raspberry Croissant and Fruit Danish.... we were eating the fresh Raspberry Jam by the spoonful and can confirm - pretty tasty. Our go-to-save-for-home order on Saturday usually includes: a baguette, a baguettezel, almond croissant, chocolate hazelnut and/or Pain Suisse (secret bakery insight) + we save some sourdough loaves on Wednesday from thr FoodHub bake. Got a constance stock rotation going on over here...
Best way to store loaves? Pre-slice (once the loaf is a day old - it's easier to slice) and store it in the freezer 🍞🍞🍞 pop the slices in the oven while it's preheating at 350 for ~5min
Hardest rain we've ever had at a market before and y'all still showed up 💘💘💘 (thankfully most people showed up before the really hard rain came)
