Roasted local young beets are tossed with pistachio gremolata and placed on a bed of citrus-quinoa salad and pickled red onion, all topped with a dollop of whipped lemon chevre!

FORK’S colorful summer Cauliflower & Hummus is a bed of hummus and poblano paste with grilled & caramelized cauliflower layered over. It’s topped with chimichurri, pickled onions, crispy garbanzos, chili threads and lime!
