Red Beards BBQ is officially signed up for the 2nd Annual Meat & Tater BBQ Fest in Meridian, Idaho.

Last year I called this event ā€œThe Jack of the West,ā€ and I still believe it. With World Champions, Jack qualifiers, American Royal teams, and the best pitmasters in the country making it one of the toughest contests you’ll find anywhere.

We’ll be taking on the full The Kansas City Barbeque Society contest, plus the One Rib Challenge, Anything Potato Auxiliary, and Dessert Auxiliary. It’s going to be an insane but we are here for it.

It’s us vs. the world… but at the end of the day, our biggest competition is ourselves.

Every contest is another chance to learn, refine our craft, and cook better than we did yesterday. If we walk away knowing we put our very best food in those turn-in boxes, we’ll be proud of the result—wherever our name ends up on the scoreboard but we sure as hope it’s us at number 1 so we can go compete at the BBQ World Cup & Expo for a shot at a million!

Also, due to it being on a single-day event, we will not be vending, but I hear Abbott BBQ is slinging briskets so I’d go see him and everyone else!

See you in Meridian and after the competition event is over and all turns in are done. We are happy to give out the competition rejects to you all that support us.

What a great weekend at the Idaho BBQ Association Smoke on the Prairie BBQ Contest

Lydia and I had the honor of being table captain for the amateur backyard BBQ contest, and it was awesome seeing so many teams getting after it and putting out some great food. Buddy Darwin did and all involved did a great job.

Before the contest, we stopped by Kuna High School to visit with their BBQ team. I was blown away by everything they have going on. They have a full-fledged culinary program, passionate students, and a team that’s already making noise in competition BBQ. To top it off, they walked away with 1st Place Chicken at the contest! Congratulations to those students and everyone involved in building such a great program. I was happy to hook them up with goodies from and &bcharcoal to help fuel their future cooks.

One of my favorite moments of the weekend was spending time with my buddy Ronnie Johnson of Ronnie Johnson BBQ. Ronnie shared that he recently celebrated 76 days sober and competed in his first BBQ contest sober. He told me he’d been watching Heath Riles BBQ videos on repeat and couldn’t wait to get back behind the smoker. A few hours later, he was walking away with a 2nd Place Ribs call. Proud of you, brother and Heath Riles BBQ will be super pumped for you as well!

Between seeing students excited about BBQ, watching Kuna high bring home a chicken win, and seeing Ronnie get a call in his first contest sober, I’d say Smoke on the Prairie was a pretty good day!

Memorial Day ā¤ļøšŸ‡ŗšŸ‡ø

Today we remember and honor the brave who paid the ultimate price so everyone can live free, gather with family and friends well enjoying days like this around the smoker.

Pork ribs, chicken halves, and even tried lamb ribs for the first time today. Forever grateful for the freedom to do what we love because of those who gave everything.

Rest easy, heroes.

When life (and Mother Nature) decides to test your gear… ā˜”ļøšŸ”„
Early April I had a total BBQ disaster. My tote full of gear got accidentally left in the perfect spot to catch every drop of runoff from the shed during a massive rain. Completely flooded.
Inside were two ThermoWorks Dots, two Smoke X4, and a bunch of other BBQ tools — all completely toast. No saving any of it. That was hundreds of dollars straight down the drain. With a big spring fair comp just days away, I had to make a plan. I still had my RFX, one working Dot, and my trusty pen, so I reached out to ThermoWorks knowing what they’d probably say… but I just needed to hear it.
I made a plan, rolled out, and everything worked out.

Then a few days later, a brand new Smoke X4 shows up at my door. Completely unexpected. I never asked for it — just pure, awesome customer service from the team.
I’ve broken just about every other temp device out there (especially those pens I always leave sitting out šŸ˜…). ThermoWorks is the only brand that survives my chaos, and they actually stand behind their customers when something goes wrong.
I should tag more but I always forget — this is exactly why I run their gear. Durable + accurate products + people who take care of you when it matters most.

2nd Place Chicken at the Famous Dave’s All-Star BBQ Series in Yakima… and some tough lessons in the other categories.

We’re definitely bummed we didn’t get the results we were hoping for, but that’s barbecue — it keeps you humble. Huge congrats to friend on another Grand Championship! That’s three consecutive years now. Absolute beasts team Edger and Chelsea are! We’re rooting hard for you at World Foods!

Shoutout to our fellow team B&B — for pulling together a reserve grand championship despite Mother Nature doing everything possible to eliminate you. Incredible story of adapt, staying calm, and just making it happen. Now good go crush it at World Foods too and show the world how the PNW cooks.

🄩 Gold Label Manhattan Filet Oscar Style with Dungeness crab, smoked Tillamook butter & smoked garlic chimichurri over smashed potatoes - perfect medium rare but forgot the finishing salt and we should of left the potato’s off the plate I guess. Did get told the chimichurri crab was the best thing had today by one of the judges (kudos to Jason).

People Choice: Teriyaki pinapple sweet chili sauce wing- it was popular but couldn’t beat Bush Kitchen bbq sauce fondue tower!

Massive thank you to **Jason ** for making the trip and grinding it out with me despite being in a super busy time in your life. Couldn’t have done it without you brother.

2nd Place at the Pacific Northwest Food Championship Series: Hometown Showdown in Yakima, Washington! šŸ”„

I was excited to cook this competition because it was an opportunity to push myself way outside my comfort zone. Sides, desserts, and fancy plating aren’t my strong suit — I’m usually the guy who stays out of the way when it’s ā€œboxing timeā€ at comps. Ive ruined more then helped asked Tyson lol.

This time I had no choice or anyone to pawn it off too. I practiced like crazy, hit up some friends for advice, practiced more, and showed up ready to fight.

It was a battle. Time flew by. Problems happened but more on later just know with only 6 minutes until turn-in I questioning if I would even have a dessert to turn in. Pure chaos… but I survived and was proud of what I put on the table and will learn from the mistakes.

Helped tremendously that the lamb from Boise River Lamb carried the day. Incredibly fresh and I nailed the cook — reverse seared and seasoned with Heath Riles BBQ Simple Citrus. That was the hero of the plate.

Huge thank you to Shane Davis making my custom black walnut turn-in boards — they looked incredible. So awesome to be cooking against him again. Also proud of Shane for being 5 months sober and back out here competing and having fun.
