Cotechino with lentils is one of the iconic dishes of the Italian New Year's Eve, deeply rooted in popular tradition and the auspicious meaning of the beginning of the new year.
The tradition of eating cotechino and lentils on New Year's Eve stems from the symbolic value attributed to the two ingredients:
Lentils, with their flat, rounded shape, resemble coins. Since Roman times, they have been considered a symbol of wealth and prosperity: eating them at the stroke of midnight was a wish for economic abundance for the new year.
Pork, from which cotechino derives, has always been a symbol of opulence and well-being, as in the past it represented a fundamental food reserve for peasant families.
Why on New Year's Eve?
Eating this dish at the end of the year has a ritual significance: it closes out the old year with a "rich" and substantial food, to propitiate a future of good fortune, stability, and abundance. It's no coincidence that, according to tradition, the more lentils you eat, the greater the prosperity that will accompany the new year.
