CAKES FOR SPRING 🌷
warmer weather is making me want to celebrate! & what better way than with a gorgeous cake — I need to make them all!
CHERRY BLINKS 🍒 from Betty Crocker, 1971
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/3 cup shortening (I used butter)
1 egg
1.5 tbsp milk
1/2 tsp vanilla
1/2 cup raisins or cut up dates
1/2 cup chopped nuts
1.5 cups wheaties cereal, crushed
candied or maraschino cherry halves
— heat oven to 375. mix flour, baking powder, soda, salt, sugar, shortening, egg, milk, and vanilla. stir in raisins and nuts. drop dough by teaspoonfuls into cereal; roll gently until completely coated. place balls 2 inches apart on greased baking sheet. top each cookie with half a cherry. bake 10-12 minutes. makes 3 dozen cookies.
