We sponsored/ hosted a Next Gen Homesteaders workshop and it was a lot of fun. The focus for the workshop was, of course, poultry processing. Participants learned the difference between laying breeds and broiler chickens, how to contain and care for Cornish cross chicks as well how to process and prepare them for the table. Each paid participant was provided with a workbook, hands on experience, their own paring knife and a packaged bird.

“THE FACTS OF LIFE. I am seeing lots of new people enjoying their foray into chicken keeping. I am also starting to see lots of new people hatching chicks from their own flocks. Both are positive actions for connecting more people to the reality of their food source and taking steps towards more sustainable lifestyles.
I just wanted to remind everyone new to hatching chicks, please plan responsibly for what you are going to do with the 50% (or more) of your chicks that happen to be male. In about two months, there will be a glut of people wailing that chicks they hatched are males, they can't keep them, they are "too sweet" to end up in the freezer, and could someone else please give them a home. Please consider another style of flock management. There are not enough "good homes in the country" for all the roosters that are propagated in people's backyards. Many of us have thought long and hard in addressing this issue, and certainly anyone who desires to call themselves a "breeder" needs to have policies in place for cockerels. As someone who was an ethical vegetarian for over 30 years, but who now eats her extra male birds, I can attest to the soul searching that may need to occur for some of us. But please have the foresight to engage yourself in the conversation before you choose to hatch chicks. What are you.....who brought them into the world.....going to do to ensure they live a humane and wanted life?

My favorite part of being a poultry processor is seeing all the delicious turkey pictures! This year, even more than years past, these pictures brought much joy.
This years biggest turkey is the season was 48.8 pounds! 🦃 🍽 🍗
