🍜🔥 Spicy Oxtail & Shrimp Pho

Rich, slow-simmered oxtail broth paired with tender shrimp, silky rice noodles, and fresh herbs for the ultimate comforting bowl of pho. Packed with deep beefy flavor and a spicy kick in every bite!

🛒 Ingredients:

For the Broth:

* 2½–3 lbs oxtail
* 1 onion, halved
* 2-inch piece ginger, sliced
* 6–8 star anise
* 1 cinnamon stick
* 4 whole cloves
* 1 tbsp coriander seeds
* 1 tbsp salt
* 1 tbsp sugar
* 1 tbsp fish sauce (plus more to taste)
* Water to fill the pot

For the Pho:

* 8 oz rice noodles
* 12–15 large shrimp, peeled and deveined
* 1 tbsp cooking oil
* 2 green onions, sliced
* ¼ cup fresh cilantro
* 1 jalapeño, sliced
* Lime wedges

For Serving:

* Chili crisp or chili oil
* Sriracha sauce
* Hoisin sauce (optional)

👩‍🍳 Directions:

1. Place the oxtails in a large pot and cover with water. Bring to a boil for 5 minutes, then drain and rinse to remove impurities.

2. In a dry skillet, toast the star anise, cinnamon stick, cloves, and coriander seeds for 1 minute until fragrant.

3. Return the oxtails to the pot and fill with fresh water.

4. Add the toasted spices, onion, ginger, salt, and sugar.

5. Bring to a boil, then reduce heat to low and simmer for 4–6 hours until the oxtails are tender and the broth is rich and flavorful.

6. Skim excess fat if desired, then stir in the fish sauce and adjust seasoning to taste.

7. Remove the oxtails from the broth and pull the meat from the bones. Set aside.

8. Cook the rice noodles according to package directions. Drain and divide among serving bowls.

9. Heat oil in a skillet over medium-high heat. Cook the shrimp for 1–2 minutes per side until pink and fully cooked.

10. Add the shredded oxtail meat and shrimp over the noodles.

11. Ladle the hot broth into each bowl.

12. Garnish with green onions, cilantro, jalapeño slices, and lime wedges.

13. Serve with chili crisp, sriracha, and hoisin sauce on the side.

💡 Pro Tip: For the richest pho broth, make it a day ahead and refrigerate overnight. Remove the hardened fat from the top before reheating, leaving you with a cleaner, deeply flavorful broth.
