This is the perfect appetizer that your guests are sure to devour!
Queso fundido:
• 1 tsp vegetable oil
• ½ c. yellow onion, minced
• 1 garlic clove, minced
• 1 poblano pepper, seeded and chopped (reserve some for topping)
• 4 oz fresh pork chorizo sausage, casing removed
• 1 tbsp all-purpose flour
• 1 c. cheddar cheese, shredded
• 1 c. Monterey jack cheese, shredded
• ¾ c. Mexican style lager beer
Toppings:
• ¾ c. roma tomatoes, chopped
• ¼ c. red onion, peeled and minced
• ¼ c. queso fresco cheese, crumbled
• 1½ tbsp fresh cilantro, chopped
• Tortilla chips, for serving
Instructions:
1. Heat oil in a large cast iron skillet over medium-high heat. Sauté onions, garlic, and peppers for 2 minutes. Crumble in the sausage, and continue to sauté for 5 minutes or until sausage is cooked completely.
2. In a large bowl, toss flour with cheddar and Monterey jack, until coated.
3. Pour beer into the skillet to deglaze, making sure to scrape the bottom of the pan to get all the tasty brown bits. Whisk in cheese, a handful at a time, until melted and smooth. Reduce heat to low, and allow to simmer for 5 minutes, stirring frequently.
4. When ready to serve, top hot (and still simmering) queso with tomatoes, onion, queso fresco cheese, and cilantro. Serve with tortilla chips for dipping.
