We find it amazing that people still see and comment on our pages even though we have been closed for 18 months! retirement is grand
Today someone commented on our peanut butter oatmeal bars and wished we/they were still around. Well, here's the recipe so you cam make them at home.
Oatmeal Peanut Butter Bars aka Quabbin Bars
These peanut butter bars were served in the Quabbin cafeteria in the 80s
1 cup shortening
1 cup white sugar
1 cup brown sugar
2/3 cup peanut butter
1 teaspoon vanilla
Cream these five ingredients together.
Add 2 eggs and 1/2 cup.milk. Blend until smooth.
Sift 2 cups of flour with 1 teaspoon of baking soda and 1 teaspoon of salt. Add to mixture and beat until combined. Blend in 2 cups of oats.
Prepare a half sheet pan with spray or shortening. Line bottom with parchment.
Spread batter into pan and bake for 15-20 minutes in a 325 degree convection oven
Chocolate Frosting
3.5 cups of powdered sugar
1/2 cup of cocoa
1/3 cup of melted butter
two tablespoons of hot water
vanilla extract
Pour over the bars while they are warm so that the icing will smoothly glaze the bars. Cut when cool.

For those of you who came to ESK regularly, you might have seen or heard John Scott, our resident curmudgeon. He would sit at the counter daily, drink his coffee with lots of Splenda and talk with everyone about anything. He spoke with great pride about Monty Tech where he was a long time member of the Monty Tech school committee after he retired from the Monty Tech English department. He even wrote poetry for many of the ESK staff!
He recently passed away; we have few details but it seems to have been sudden. He was recovering from some medical issues but seemed to be doing well.
He is missed by those who knew him.

Joan and I are making soup for the QUEST Souper Bowl fundraiser on February 6th. The pictures are of roasted vegetables for the vegetable stock used in making the broccoli cheddar soup. We also made chicken stock for the chicken noodle soup. More information coming!
Just taking a moment to wish all of you a Merry Christmas and Haopy Holidays. We miss visiting with everyone who stopped by the restaurant. The best part of having a restaurant in the center of town is reconnecting with friends and making new ones. Thanks for all your support and best wishes for 2016. :)

Well, this has been great fun and lots of work! Joan and I are returning to retired life after Tuesday. We have sold the business to Becki and Fred Hamel. Becky has been working with us for the past month and will open the new "Becki's Bistro" on Wednesday.
We have met so many wonderful people and will miss chatting with them over coffee. We have worked with many great people as well. Thank you for your support over the past two and a half years. We will miss you all, we just won't miss getting up at 4:00 am every day. :)
More bathroom work being done today so we are closed in both the dining room and the ice cream window. Both open tomorrow

Work is progressing on the new bathroom. Should be done by next weekend
The ice cream window will also be closed Monday Tuesday and Wednesday to allow the plumbers and other folks to work on the bathroom installation. See you all on Thursday.
