Ft zucchini bread with einkorn and panela; apricots roasted with panela and vanilla bean; fig leaf gelato with fig leaves from our yard; and blackberries. Sunday nosh - pancakes and bacon. Fluffy pancakes topped with macerated strawberries ( panela, aged balsamic, and sea salt) and a rose water whipped cream.

Sunday brekkie. French toast and bacon. Used our sourdough “milk” bread made with kefir to double the fermented fun. Soaked in a batter made with house made 5 Spice, front yard eggs, milk, and some panela. Served with the pepper nutmeg bacon I made a couple weeks ago. Washed down with washed Honduran coffee (4 years later still my favorite coffee. I think I’m fortified enough to go change all the clocks.

Bacon by any other name is still bacon. 2 slabs cured with black and white pepper, nutmeg, salt and panela for about a week. Then smoked at 200F until it hit an internal temp of 140F. Will hang out in the fridge overnight and then I’ll pull the skin and slice it up.

Today! Caraway Beer Rye! We're so glad you're loving our weekend rye special, featuring stout, caraway, and a touch of panela. It's just the right antidote to the rainy day. Eat it with soup! Beautiful cardamom bun shot by ! The star of the show is the Cloud Forest cardamom from (I mean yes, cloud forest, let's go to there and float away on cardamom pods) with a strong supporting role from the unrefined panela sugar. Did we mention it's our croissant dough? Flaky, crunchy, caramelized cardamom? Yes and yes and yes.

Dessert Special today! Peach Shortcake with Cinnamon Panela Gelato. It's as much a celebration of the last month of peaches as it is of our favorite sweetener, panela from . Panela is an unrefined sugar that Nela sources from Colombia working directly with farmers. Panela is the only sweetener we used in today's dessert special from the peaches to the housemade gelato to the shortcake dough and sprinkled on top of the biscuits. Grab one while you can!🍑🌾💜
