Inspired by a trip to the Highlands and Speyside regions of Scotland and the craft beverage culture of the Pacific Northwest, the idea for Highside Distilling was born. Our mission is to provide a uniquely Pacific Northwest experience to the time-honored craft of fermentation, distillation, and aging of spirits. Whether it be Single Malt Whiskey, Gin, or Amaro, all of our products are a nod to tradition, with a unique character that captures and defines the spirit of this great region.

THIS Saturday. Oysters. Fernet. Single Malt. Fernet Aged Single Malt. Yep, we’ll be releasing our newest whiskey, aged in our own Fernet barrels, from 3–8 PM at the distillery.
We’ll have:
- Complimentary tastings of the new release for all guests
- Fresh oysters from Salish Sea Greens
- Specialty cocktails
- Bottle pickup for Society members
As with previous releases, the event is open to everyone. We’d love for you to stop by, taste the whiskey, and join us for the afternoon.
Bottles, however, are reserved exclusively for Single Malt Society members, with additional bottle purchases available for members while supplies last.
We’ll also reserve a small number of memberships for day-of signups, though availability will be limited.
We hope you’ll join us for what should be a great afternoon of whiskey, oysters, and good company.

We’ve got a fun one coming up and you can get a sneak peak THIS weekend.
Our next Single Malt Society release starts with our flagship Single Malt Whiskey, aged over 5 years before finishing in barrels that previously held our own Fernet Lario! The result is a whiskey that’s rich, dark, and unlike anything we’ve released before.
The Fernet influence comes through in both color and flavor. Expect notes of baking spice, dark herbal character, and a subtle smokiness from the black cardamom we use in the Fernet. Bottled at cask strength, it’s bold, complex, and incredibly enjoyable neat. Think of this as a Toronto cocktail in a glass.
We’ll be releasing the whiskey on Saturday, June 27 from 3–8 PM at the distillery. Come by for a preview taste this weekend with Dad and sign up before it’s too late!
Come watch me fumble behind the bar TOMORROW 3-7p. A little bit rusty but I can still make a mean black Manhattan. And get a chance to taste our recently released peated single malt while we’ve still got it. Cheers!
