Wild Gift Coffee

Oh hi! We're the new owners of Once Over!

Some of you may know me as a Once Over barista for 10 years and the manager for the last few (I'm also responsible for all the animal video posts, sorry!)

But let me introduce my partner Essam! He's a multi talented filmmaker, photographer, swing dancer, plant lover, Corgi owner...did I forget anything Essam Osman?

We're so excited to carry on the legacy built by Rob and Jeneé, while they focus on roasting at their shop Wild Gift Coffee. But we may have a few new tricks up our sleeve. ⚡️

And we're excited to continue making you all the best coffee in the heart of South Austin.

See you soon! 👋

Around this time of year we would normally be traveling to Brazil to visit long standing producing partners Luis Paulo sr and Jr. and manager Chico. Selecting our Santa Ines lot for the year and exploring new micro lots from area producers. This go ‘round the selection process involves more shipping than flying, and electronic communication but the relationships, the love and attention to coffee are all the same. With the helping hand of Importing partners we are excited about this years Brazil crops after a very difficult year there in Brazil. New coffees coming around the beginning of 2022, 7 years strong with the Pereira family. Have you had our offerings from Brazil?

We were gifted this 50 year old chemex set. Original box set of round filters (all of which have a water mark) and made in USA pyrex Chemex. We’ll do a brewing vid next week with the 1969 instructions. What coffee should we use?

*New Coffee Alert*
This coffee comes from Triunfo Verde Coop in Jaltenango, Chiapas, Mexico. The coop is named after the biosphere reserve where this coffee is grown. We visited Triunfo right before the shut down and are excited to be working with the folks for a long time. They are a very progressive, community focused organization with programs for young producers and women producers. This selection is like a candy bar with milk chocolate, nougat and almond.

We made it in and we’re roasting, however, there are no pickups today. Hope to get caught up on all shipping tomorrow, thanks for your patience!

Wishing everyone a happy day of remembrance on this day dedicated to Dr. Martin Luther King Jr. Peace and love!

Look at all those coffee bags! Central Market 38th Street, Austin. They make a great last minute gift!

We at Wild Gift Coffee do not and will not stand for social injustice - whether based on race, religion, sexual orientation or other. We are deeply saddened by the death of George Floyd, and so many others like him, and we will not stand idly by while these acts of violence continue to be carried out by the very people who are meant to protect us. We are donating $2,000 to the Austin Justice Coalition and $2,000 to the Austin Area Urban League, two local organizations helping our community's people of color. We hope you will stand with us in this fight against injustice.

Mechanical picking.
This is utilized a lot in Brazil. While our lots are mostly hand picked and these are only used when ripeness is totally uniform, these machines are used to clean the trees of all left over fruit and loose leaves for a fresh start for next harvest. In about a month there will be white flowers and 8 months after that, ripe cherries.
The leftover fruit that is harvested here goes mostly to the local market or large commodity market. This video was taken on the Santa Ines farm we have been working with since 2014.

Timeline photos 09/13/2019

Producers deliver coffee, wait for the coffee to be sorted, graded, roasted, cupped and they’re paid same day. Coffees are then sorted by quality in color coordinated bags. It takes several of these small Cajamarca producers to make up our lot for the year.
