A savory blend that transports you to the East Mediterranean with just one bite and leave you wanting more!
Have you tried this dish before? 🤤✨ Here's how to make it:
✨ Preheat the oven to 325°F and line a large baking sheet with parchment paper. In a medium bowl, whisk the water and chia seeds together and let stand 5 minutes until thickened. Stir in the quinoa, pepitas, sesame seeds, salt and za’atar.
✨ Evenly spread the quinoa mixture onto prepared baking sheet with spatula until it is between ⅛-inch to ¼-inch thick. Bake for 30 minutes. Remove from oven.
✨ Lift parchment onto cutting board and cut into cracker-size shapes whatever size you prefer. Flip the crackers over with a spatula. Place parchment and crackers back on baking sheet.
✨ Bake for 25 to 30 minutes until edges are golden and center is set. Transfer baking sheet to cooling rack and cool completely on the sheet. Store in an airtight container.
✨ While they are cooling prepare your salad and vinaigrette. In a small bowl, whisk the lemon, pomegranate molasses, garlic, salt, 2 tsp finely chopped mint, 1 teaspoon of the sumac and olive oil until it is emulsified.
✨ For the salad, toss the romaine, tomatoes, onion, cucumber, radishes, and quinoa za’atar crips in a salad bowl. Toss the salad with the vinaigrette. Dust with the remaining sumac, fresh mint and freshly ground black pepper. Serve immediately ✨
You could make the crips days before or opt for Medbar Zaatar for a fast and easy substitution 😊

Are you a fan of pies? 🥧 Then you must try this!
Here's what you need to do:
✨ In a large bowl, mix together the plums, figs, rose water, cinnamon, and brandy or wine. Cover and let sit for one to two hours, in or out of the refrigerator.
✨ Preheat the oven to 350 degrees. Butter a two-quart baking dish.
✨ Whisk the arrowroot into the juice, and scrape the fruit and all of the juice into the baking dish. Set the baking dish on a baking sheet for easier handling, and place it in the oven.
✨ Bake 20 to 25 minutes until the fruit is bubbling and the liquid is syrupy. Remove from the oven, and allow to cool if desired.
✨ About 30 minutes before serving, spread the crumble topping over the plum mixture in an even layer. Bake 20 minutes, or until the fruit is bubbling and the topping is nicely browned. Remove from the heat, and allow to cool for at least 10 minutes before serving. You could also opt for Medbar Rose & Fig for an easy substitute for the crumble!

The traditional Mediterranean diet dates back to ancient times (5000-2000 BC) when the key defining ingredients were the trio of wheat, wine, and olive oil, as well as wild edible leafy greens and legumes.
It is older than the Colosseum 😲✨
✨Hummus Toast ✨
Chickpeas (3 cups). Chickpeas, also known as garbanzo beans, are the star ingredient in hummus. Canned or dry chickpeas? If you're wondering how to make hummus from scratch--the best, extra creamy, authentic stuff--you'll want to cook your own chickpeas from scratch (you'll give them a good soak overnight + boil in water until well done. More on this later)
Garlic (1 or 2 cloves). Start with 1 clove and make sure it is finely minced. Tip: to tame its pungency, allow minced garlic to sit in a little bit of lemon juice for a few minutes.
Tahini (⅓ cup). Tahini is a rich, nutty, and slightly bitter paste made from toasted sesame seeds. (You can find my go-to tahini paste here).
Fresh Lemon Juice (from 1 lemon). Fresh lemon juice is just the thing to add tang here.
Kosher Salt. Just a pinch of kosher salt to your liking. You can always add more. If you're interested in adding
Extra Virgin Olive Oil. A generous drizzle of quality extra virgin olive oil is the way to finish and serve this dip the authentic way. (You can find my go-to extra virgin olive oils at our online shop here)
Garnish. Not to be underestimated. My favorite way to garnish a bowl of hummus, once the EVOO has been poured nicely right in the middle, is a few pinches of tangy sumac (sometimes ground cumin is a good addition). If you have some extra cooked chickpeas, plant them right in the middle. For a pop of green, you can add a garnish of fresh parsley.

2 cups sugar or jaggery ⠀
2 tablespoons lemon juice ⠀
In a large pot, add the berries, sugar, and lemon juice. stir the mixture and cook over medium heat. Reduce to a soft boil on low heat and cook, uncovered, mixing repeatedly, for about 20 minutes or until the mixture thickens. ⠀
Cool it down ⠀
Eat with toast, or transfer jam to a glass jar with a fitted lid and store in the refrigerator for up to 2 weeks. ⠀
