Zach’s First Rye Cocktail

Ingredients
• 1.5 oz Ironroot Republic Sleight of Hand Rye Whiskey
• 0.25 oz Acid-Adjusted Lemon Cordial (see below)
• 0.25 oz Green Chartreuse
• 2 dashes Black Walnut Bitters
• Ginger ale (to top)

Garnish
• Flamed rosemary sprig

Acid-Adjusted Lemon Cordial
1. In a pitcher, combine:
• 200 g fresh lemon juice
• 4 g citric acid
• 2 g malic acid
• 150 g white sugar
2. Stir until sugar is fully dissolved.
3. Store refrigerated until ready to use.

Preparation
1. Add all ingredients except ginger ale to a shaker tin.
2. Fill with ice and shake well.
3. Strain into a Collins glass over an ice spear.
4. Top with ginger ale.
5. Flame a rosemary sprig with a torch and place it on the glass as a garnish.

The HEB Whiskey Smash

Ingredients
• 0.75 oz Liquid Alchemist Prickly Pear Syrup
• 0.5 oz Fresh Lemon Juice
• 0.25 oz Blackberry Mead Reduction (see below)
• 2 dashes Mole Bitters
• 2 oz Pecan-Infused Bourbon (see below)

Garnish
• Texas ice cube
• Medjool dates
• Optional: chocolate pecan snack

Pecan-Infused Bourbon
1. Lightly toast and chop ½ cup pecans.
2. Place pecans and 375 ml Ironroot Republic Bourbon into an iSi whipper.
3. Charge with N₂O and shake for 1 minute.
4. Let rest for 2–3 minutes, then slowly release the gas.

Blackberry Mead Reduction
1. In a small saucepan, combine 1 cup blackberry mead with 1 tablespoon wildflower honey.
2. Simmer gently, whisking occasionally, until reduced by half.
3. Allow to cool before use.

Preparation
1. Add all ingredients to a shaker tin.
2. Fill with ice and shake vigorously.
3. Strain into a rocks glass over a Texas ice cube.
4. Garnish with Medjool dates and serve with a chocolate pecan snack.
