Nothing leaves this shop as waste if we can help it. Once chicken bones have been roasted for stock and simmered down for broth, they still have one more job. We dehydrate them overnight, blend them into a fine powder, and the result is a bone meal fertilizer — higher in nitrogen than most — that goes to Trosi Farms in Elgin. Trosi practices Korean natural farming, and they use it to feed their soil. So when you eat a Trosi summer melon this year, it traces all the way back to a Greener Pastures chicken that passed through our kitchen. That’s the circular system we’re proud to be part of.

There are many differences between ground beef from Radius versus Whole Foods. If we had to explain it simply — the difference is a local, known supply chain versus a global, unknown supply chain. We know every detail about our beef — exactly how the animals are raised, their diet, breed, harvest age, and processing. Those details get lost in a global supply chain with beef sourced from Australia to Uruguay.
These are differences you can taste.

Grandma Greg’s and .snacks cookies are officially at Radius! Greg started baking because his son loves bananas, which inspired the first banana chocolate chip flavor. Greg brought in cookies for the staff to try, then for customers to try, and now 8 more kinds of cookies later, and they’ve been hard to keep stocked. Peaches might be the most versatile fruit of the season — sliced over yogurt at breakfast, tossed with burrata and basil at lunch, halved on the grill next to a pork chop at dinner, and baked into a galette after. The first organic peaches of the year just came in from Nava Farm. We’ll have them weekly through summer, available in the shop and on Instacart.
