Visiting tea gardens in Kagoshima Japan. The soil here has high mineral content due to being near active volcanos. The volcano frequently deposits volcanic ash into the surrounding areas. This volcanic ash, called “shirasu,” plays a crucial role in enriching the soil.

When sourcing single origin (from one garden ) it’s common for flavor notes to change from one season to the next. This is why mass produced tea is from multiple gardens to balance out any seasonal changes that may affect the crop.

When it comes to lighter color teas such as Japanese green for example. Heat plays an important role. Simply put the hotter the water the more bitter the tea. This does not apply to darker teas. Also notice the green vibrant color. If I were to use boiling water the color would turn more yellow or brown. Aim for around 170-175F when brewing Japanese green and keep the time at about 1 minute. This is a good baseline and adjust from there.

Both were great but Matcha was my pick. Something about the delicate bitterness and the sweet. Both were airy and creamy and not too sweet. Lady M Cake Boutique for the Win! 🍵🍰
