Just some photos that warm me up 🧡

Not to wax poetic here, but we are in the thick of some of the most trying times we’ve had as parents. I think it feels extra hard because we are both learning how to regulate our nervous systems as we teach our toddler to do the same. 2.5 is such a fun age, but it is equally as exhausting—between the “NOs” and the “don’t do that’s”, the sleep regressions and the new found independence, we are tired—but in between all of those, there’s also a new abundance of “ I wuv yous” and silly giggles, little conversations about everything he’s learning and it’s simply the best.

The array of emotions we are all feeling daily are shocking if I’m being honest. I have never been so stressed out and consciously aware of it in my life. After reading The Let Them Theory I’ve become hyper-aware of my “control” issues (a coping mechanism) and also realized how that just doesn’t really work when you have kids. You can’t control much in this life, other than yourself. I’m learning to surrender to the chaos and find the glimmers. Enjoy the hard times for what they are because before you know it they’ll be gone.

So to all the toddler parents out there having a rough go, I see you. I feel you. This s**t is hard, but it’s also pretty special. ✨

Sourdough has become my outlet in the last five ish months. I love baking and if I bake for you, that’s how you know I realllllyy love you. My sourdough isn’t perfect, but it’s fun seeing myself improve and try new things with it! Also—in case you didn’t know, sourdough actually has some great benefits to your health👇🏽

1. It can improve your digestion because of the fermentation process it goes through.

2. Sourdough helps create healthy gut bacteria/microbiome because of the beneficial bacteria like lactobacillus and can act almost as a prebiotic to your gut.

3. It can actually help LOWER your blood sugar levels because of its lower glycemic index.

4. It can help increase your nutrient absorption because fermentation can make minerals more readily available for the body to absorb.

5. Because it’s homemade it has zero preservatives or chemicals and who doesn’t want that in their food!?

I’m dairy/soy free because sweet Noa has a milk-protein sensitivity (Ari did too) and because I’m nursing, I get to change my diet. It’s been fun experimenting and figuring out how I can change up recipes to still work for me. Recently, Ari and I made these muffins together and added in some of the pulp leftover from juicing. These are a great morning snack for Ari, or anyone really. Plus he gets some added nutrients from the juice pulp 🌱👏🏽

Banana Coconut Muffins
•1 and 1/2 cups all-purpose flour (spooned & leveled)
•1 teaspoon baking powder
•1 teaspoon baking soda
•1/2 teaspoon salt
•1 teaspoon ground cinnamon
•1/4 teaspoon ground nutmeg
•1 and 1/2 cups mashed bananas (about 4 medium or 3 large ripe bananas)
•6 Tablespoons unsalted butter, melted (or melted coconut oil)
•2/3 cup packed light or dark brown sugar (or coconut sugar)
•1 large egg, at room temperature
•1 teaspoon pure vanilla extract
•2 Tablespoons (30ml) milk
•1/2 cup unsweetened shredded coconut
• 1 cup juice pulp
I love this recipe because it allows me to sneak in some extra veg into Ari’s diet and I don’t waste any part of the produce I use when juicing. You can eliminate the pulp and coconut too if that’s not your thing. Swap the coconut for chocolate chips, nuts or dried fruit if that sounds better.

Combine wet ingredients first, then add in the dry ingredients. Top with a couple dark chocolate chips 😉
Bake at 425F for 5 minutes, then drop the temp to 350F and bake for an additional 15-18 minutes.

A few easy swaps to accommodate allergies
and sensitivities-
Eggs—swap to 1/3 cup unsweetened apple sauce

Butter/Milk—coconut oil is my fave to use in place of butter, but there are some good vegan butter options out there. Milk can be swapped for any alternative of your choice, we used almond milk.

Sugar- you don’t have to add it in, and it’s still great without the sugar. I used coconut sugar, but again you can completely eliminate the sugar. Great *better* swaps are maple syrup or coconut sugar.

Flour- almond flour is a great swap and I have done that many times, it makes for a more dense muffin, but still delicious. You may just need to play with the amount you use.
