Happy Monday!!

Creamy Bacon Ranch Pasta Salad packs so much flavor into one easy-to-make dish. Perfect for picnics and potlucks!

Prep Time: 10 minutes Cook Time: 11 minutes Refrigerate: 1 hour Total: 21 minutes

Ingredients:
1 pound cavatappi noodles or macaroni, small shells, bowties.. etc...
1 ounce ranch seasoning mix
3/4 cup mayonnaise
1/3 cup sour cream
1/3 cup milk
8-10 slices bacon cooked and crumbled or chopped
1 cup frozen peas thawed
1 cup cheddar cheese cubed
1 cup shredded carrots
1 cup cherry tomatoes halved, or grape tomatoes

Instructions:
Cook noodles according to package direction. Drain and set aside to cool to room temperature.
While noodles are cooking/cooling, in a large bowl combine ranch seasoning, mayo, sour cream, and milk. Whisk until smooth.
Stir in bacon, peas, cheese, carrots, and tomatoes into the ranch dressing.
Slowly add noodles and stir until noodles are well covered in dressing and all ingredients mixed together.
Cover and refrigerate until serving.
Add a little milk before serving if needed if it seems too dry (just a tablespoon or so). Stir well before serving and enjoy!

It's Friyay!!! Here's a great recipe for an adult beverage to enjoy and relax!

INGREDIENTS:
Ice
1 1/2 ounces lime juice
1 ounce triple sec
1/2 ounce simple syrup
1/2 ounce orgeat syrup
1 1/2 ounces gold rum
1/2 ounce silver rum
1 ounce dark rum

INSTRUCTIONS
1. Place ice in cocktail shaker. Pour in lime juice, triple sec, simple syrup, orgeat syrup, gold rum and silver rum. Shake until chilled.

2. Pour cocktail into a glass filled with ice. Hold a spoon over the cocktail and slowly pour the dark rum over the back of the spoon.
Serve and Enjoy!

Happy Thursday! We are closer to the weekend!!

Easy Cake-Mix Banana Bread
Ingredients:
1 box Betty Crocker™ cake mix (choose cake mix flavor from recipe variations below)
1/3 cup oil
3 eggs
1 1/2 cups mashed bananas (3 to 4 medium)
Additional ingredients as required for variations below

Steps:
1 Heat oven to 350°F. Generously spray 2 (8x4-inch) loaf pans with cooking spray; lightly flour pans.
2 Select your favorite banana bread recipe variation from those below.
3 In large bowl, beat all ingredients above plus ingredients from selected variation below until well mixed. Divide batter evenly between pans.
4 Bake 45 to 55 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet. Cool 15 minutes in pans on cooling racks. Remove loaves from pans to cooling racks. Cool completely, about 2 hours, to prevent crumbling when slicing. For easier slicing, store loaves tightly covered 24 hours. Cut with serrated knife, using a light sawing motion.

It's gonna be a great Monday!

CROCK POT BEEF TIPS WITH GRAVY

INGREDIENTS
2 to 2 1/2 pounds boneless beef chuck roast

1 package dry beefy onion soup mix
1 (10.5-ounce) can condensed cream of mushroom soup
1 can beef consomme
1/4 teaspoon dried thyme
1/4 teaspoon pepper
2 tablespoons butter
3 heaping tablespoons flour
2 to 2 1/2 cups of the beef cooking liquid
rice or noodles for serving
INSTRUCTIONS
Cut beef into 1 1/2 to 2-inch chunks, cutting off excess fat.
Add soup mix, mushroom soup, beef consume, thyme, and pepper to crock pot and mix together.
Add beef chunks and stir to coat. Cover and cook on LOW for 6-8 hours.

Melt butter in a medium pot and add flour. Whisk until all of the flour is mixed into the butter. Gradually whisk in the 2 cups of cooking liquid from the crock pot. Bring to a simmer and remove from heat. If you want a thinner gravy, add more liquid.
To serve, remove beef from crock pot with a slotted spoon and serve with gravy.
NOTES
You can use other types of meat as well: round steak, stew meat or beef tips.If you are using a fatty cut of meat like chuck roast, cut off as much of the fat as you can.

Happy Wednesday! We are halfway through the week!
Here is an easy recipe for Stuffed Bell Peppers for today!

Ingredients
1 pound lean ground beef (90% lean)
1 can (14-1/2 ounces) diced tomatoes and green chiles, undrained
1 envelope (5.4 ounces) Mexican-style rice and pasta mix
1-1/2 cups water
8 medium sweet peppers
2 cups shredded Mexican cheese blend, divided
Directions
Preheat oven to 375°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 5-7 minutes; drain. Stir in tomatoes, rice mix and water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, 6-8 minutes.
Cut and discard tops from peppers; remove seeds. Place peppers in a greased 13x9-in. baking dish. Place 1/3 cup beef mixture in each pepper; sprinkle each with 2 tablespoons cheese. Top with remaining rice mixture. Bake, covered, 25 minutes.
Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted and peppers are crisp-tender, 5-10 minutes.

1 stuffed pepper: 301 calories, 14g fat (8g saturated fat), 61mg cholesterol, 797mg sodium, 23g carbohydrate (4g sugars, 3g fiber), 20g protein.
