One of these days I will learn to not drop videos late at night during the week. 🥸 LOL!!! Hit that link in my bio and go check out how to make PUMPKIN PIE PUDDING! It is really delicious and I completely made up the recipe as I went. 🤣🤣🤣 ALSO - head over to (my other account) and give me a follow there. Here is a better shot of that smoked chicken I posted yesterday. Also - sorry for the long delay between videos. Life got busy all the sudden! I have one almost ready to go for you. It’s on how to make PUMPKIN PIE PUDDING (if you like banana pudding and pumpkin pie, this will be your jam for sure). I should be able to post it tomorrow!

I suppose you *could* make chicken some other way. I’m just not sure why you would really. 🤷🏻‍♂️ Smoked hot-n-fast over charcoal very hard to beat. Just look at it!!! That Kettle is putting in some work tonight.

I am catering a couple of holiday parties in the next few weeks and for one of them I was asked to make Swedish Meatballs (which I have never made). After reviewing several recipes, talking to my Scandinavian friends (not kidding) and making a few test batches, I believe I have settled on a home run appetizer recipe. Last night, I turned the last test batch into my dinner by just serving them over rice. AMAZING!!! 🔥🔥🔥

Sunny side up egg and a flaky, buttery biscuit for a quick breakfast sandwich. I didn’t bother to make bacon or even put cheese on it. Both would have been delicious, but they weren’t necessary. However, I could have used a Bloody Mary. 🤣

Oh my!!! I am helping my pal cook a brisket on his Bullseye smoker. I don’t have a ton of experience with pellet smokers (I usually cook on an offset), but it seems to be going really well. Almost time to wrap. I bet this brisket will be super tasty tomorrow! 🤩

I got my biscuit technique down and everything. I don’t be tickling’ or nothin’. 🤣🤣🤣 Actually, I am *developing* my biscuit technique. But I’d say this batch was a great start to my - so flaky and delicious. Just look at those layers!!! 😲 Oh and that is orange spiced honey butter there in the middle.

It is easy to focus on the negatives day to day. But I find I get a lot more mileage focusing on the things I am grateful for. I appreciate each and every one of you who supports me here. I love to cook and I love to share my knowledge and insights with you. It brings me a lot of joy and I am excited for what’s ahead. Journeys are better with good company so thank you for coming along for the ride!!! Also - thank you for cornbread. Without it, I would not be able to eat chicken and dressing later. 🤣😂🥰 Happy Thanksgiving, everyone!

First time cooking a turkey this Thanksgiving? Try spatchcocking it so it cooks more evenly. Want a fun game to play all day tomorrow? See how many times you can work the word “spatchcock” into the conversation throughout the day. 😂

Here is a sneak peek into a video I have planned in the next few weeks. I’ll be doing some smoked chicken and I am gonna share my recipe for what I call a Texas Blanco sauce. It is inspired by an Alabama white sauce, but the only similarity is the color. LOL!

I wanted to take a moment to give a shout out to my friends at . I dropped by yesterday to get some biscuits to kick off the “biscuit vision quest” I have begun (more about later). I got there much later in the day than I had planned, but the biscuits were still fantastic. I immediately ate one in the parking lot and unselfishly took the rest home to share with my family. We had a couple left at dinner time, so I threw together this idea…chicken stroganoff and biscuits. Think biscuits-n-gravy with a twist. Those tender, buttery biscuits were begging to be smothered and devoured. I can assure you I will be making this dish again! If you are in the Austin area, definitely swing by for biscuits, beer, and tons of other amazing things from the geniuses that also gifted us and . 👏🏼👏🏼👏🏼
