Have you heard of gluten ataxia?

Gluten ataxia is an autoimmune disorder in which the antibodies that are released when digesting gluten attack part of the brain by mistake.

Gluten is a protein found in wheat, rye, and barley. Though most people have no trouble with digesting this protein, many people have a gluten sensitivity or a disease called celiac sprue.

Is Your Brain Shrinking?: What You Need to Know
Many of you reading this short article already know that hemoglobin A1C is extremely useful revealing what the "average" blood sugar has been over the previous ninety days.
This is the same standard laboratory measurement used to measure blood sugar control in diabetics.
What many people may not be aware of is the fact that hemoglobin A1C has important implications for your brain health.
In a landmark study published in the journal Neurology, the researchers documented that elevated hemoglobin A1C is associated with changes in brain size.
The study showed researchers looking at MRIs to determine which lab test correlated best with brain atrophy and found that the hemoglobin A1C demonstrated the most powerful relationship.
They commented, “when comparing the degree of brain tissue loss in those individuals with the lowest hemoglobin A1C (4.4 to 5.2) to those having the highest hemoglobin A1C (5.9 to 9.0), the brain loss in those individuals with the highest hemoglobin A1C was almost doubled during a six-year period.
This profound study strongly indicates that hemoglobin A1C is far more than just a marker of blood sugar balance.
The good news is in most cases you have absolute control over your A1C.
An ideal hemoglobin A1C would be in the 4.8 to 5.4 range. Keep in mind that reducing carbohydrate ingestion, weight loss, and physical exercise will ultimately improve insulin sensitivity and lead to a reduction of hemoglobin A1C.

Citric acid can be found on almost any food label and is one of the most common food additives proclaimed as “natural” and “healthy.” Sure we think this natural substance comes from citrus fruits, well how in the world can that be bad?
Well, that used to be correct. Sadly, today’s citric acid is completely different, as the titans of industry have created a new Frankenstein product once again. This time the geniuses of industry create citric acid from Aspergillus niger...WHAAA?? that is black mold! You’ve likely heard of how unhealthy black mold is. Of course, producing citric acid from Aspergillus niger is a far less expensive process for food manufacturers, because of its better production yield.
So instead of producing citric acid naturally from citrus fruits like lemons, oranges, grapefruits, they grow it on black mold! So once again, big brother and the titans of industry have manufactured a product that is much cheaper to produce but more insidiously sneak a mold poison into you that at first glance on the ingredient list looks benign.
Citric acid is found in virtually all manufactured foods because it’s a flavor enhancer and preservative. It is even found in organic foods and supplements, which is why it is so important to read the ingredients in the products you buy and be knowledgeable about how the ingredients are created.
Now, one of the main problems of mold toxicity is that mycotoxins, such as black mold, lead to a variety of health challenges.
The more common symptom of mold toxicity is
chronic fatigue,
headaches,
skin rashes,
joint pains,
chronic coughs,
breathing difficulties, a
nd reoccurring sinus infections,
and overall immune suppression, to name a few.
Biochemically, the many symptoms of mold toxicity can be seen by the effects that the mycotoxins have on the mitochondria. The mitochondria are the manufactures of ATP, which is the universal cellular currency of every living organism.
A decrease in ATP will have a dramatic effect on your health as we now know that all chronic illnesses severely impact the efficiency of producing adequate ATP.
Now, as we review our biochemistry, there are three major steps to producing ATP. The first is anaerobic glycolysis, which will create pyruvate, which will enter the Krebs cycle.
Now here is the take-home message.....
The other name for the Krebs cycle is the TCA cycle or better know as the Citric Acid Cycle!
So now, we are adding a Frankenfood substrate of citric acid that will find its way into the citric acid cycle, one of our main factories to producing ATP.
So what could go wrong by adding black mold from Aspergillus Niger, into the very cycle for which we are creating energy?
