Ok this chicken was out of this world. Swipe to see what went into the marinade: olive oil, freshly picked rosemary, oregano, thyme, lemon peel, dried chili, garlic, and salt. Chop together finely and toss into the chicken (with the oil) to marinate. And if you really want succulent chicken, add a teaspoon of mayonnaise to the blend.

It smelled heavenly in my home; my love affair with fresh herbs is only just beginning.

Paired with roasted potatoes, a Greek yogurt chive dip, and lemony-ghee roasted broccoli. I added them all to the baking sheet at different times and only had one dish to clean in the end. I usually judge sheet pan meals but damn. Sometimes with a little creativity (and a small Pyrex), dreams really do come true.

We strapped on n95 masks and checked the baking aisle of 6 or so grocery stores looking for yeast with no luck before finally just asking my circle of friends to share any extra yeast they might have on hand. This roasted garlic focaccia is a product of community generosity in the face of a very serious scarcity. I’m being a little facetious and a lot sincere; I had pretty much given up on quarantine baking dreams.

It’s also an easy easy easy recipe to follow. I’ve returned to this recipe three years and counting and highly suggest trying it yourself. I don’t think it’ll even last 24 hours, I’ve got three people calling dibs on the rest and more than half is already gone. I promise you, it’s a hit.

The night before, clean your whole snapper and stuff it with mint, lemon, parsley, salt and pepper.

Make two slits on the sides and rub down with salt and chili powder. Tie to hold closed and into the fridge they go to marinate.

The next day, shallow fry in vegetable oil to desired crispness, then transfer to a baking sheet and top with a pat or two of butter and a fresh squeeze of lemon. Bake for 15 minutes, let rest for 5.

Transfer to your plate and enjoy. 🐟 🐠 🐟 🐠 I served it with ghee rice, tomato and onion salad (lemon juice, cilantro, mint, salt) and Brussels sprouts. Delicious.

- no more high intensity workouts

This week I wanted to try something new and found these salmon cakes online. Were they perfect? No. They were just good. But I learned a lot from the recipe and I’m determined to create a version that works for me, so stay tuned.

If you put a pack of frozen chicken thighs from costco, 1 teaspoon of minced garlic, 1/2 teaspoon of cumin, a can of chipotle peppers in adobo, a splash of chicken broth, and salt to taste in an instant pot for 30 minutes and then on sauté mode for another 15 minutes with the top open for the sauce to thicken, you will end up with the simplest, yummiest meal prep chicken ever. Shred it to your liking and serve as you please.

Pair it with hearty, cooked down greens, and it’s a healthy meal too. 😏
