Last night’s dinner felt like a postcard from Ikaria.

We grilled fresh sardines with a touch of sea salt, laid them gently on warm sweet potatoes, and drizzled it all with olive oil so rich it caught the candlelight.

Samantha (my wife) said it reminded her of our trip to the coast—barefoot, breeze in the air, everything slow. A meal so simple, but it made the whole table quiet.

Food doesn’t have to be complicated to feel sacred.

Grilled Sardines with Roasted Sweet Potatoes & Lemon Herb Drizzle

🕰️ Ready in 30 minutes | Serves 2

Ingredients

For the Sardines:

6 fresh sardines, cleaned and gutted

2 tbsp olive oil

2 cloves garlic, minced

Juice of 1 lemon

1 tsp dried oregano

Salt & pepper to taste

For the Sweet Potatoes:

2 medium sweet potatoes, peeled and cubed

1 tbsp olive oil

A pinch of sea salt

Fresh thyme (optional)

For the Lemon Herb Drizzle:

2 tbsp olive oil

Juice of ½ lemon

1 tbsp finely chopped fresh parsley

1 tsp Dijon mustard

A dash of honey (optional)

Instructions

1. Preheat oven to 400°F (200°C). Toss sweet potatoes in olive oil and salt. Roast for 25 minutes until golden and tender.

2. While roasting, marinate sardines in olive oil, garlic, lemon juice, oregano, salt & pepper. Let sit for 10–15 minutes.

3. Grill sardines on a hot pan or grill for 2–3 minutes per side, until slightly crisp and cooked through.

4. Whisk together the drizzle ingredients until smooth.

5. To serve, place grilled sardines and roasted sweet potatoes on plates, and spoon lemon herb drizzle over the top.
