Il y a un peu plus d’un an, nous étions en Bretagne pour aller immerger en mer quelques dizaines de bouteilles de Gueuze en association avec Sylvain, éleveur d’ormeaux dans le Finistère. Ces bouteilles fermentent à dix mètres de profondeur en compagnie de ces charmants mollusques. Ceux-ci se nourrissent de plusieurs variétés d’algues que cultive Sylvain.

Nous avions goûté à l‘époque ces mêmes algues en tartare et l’idée nous est venue de les essayer en macération sur du Lambic pour créer un lien entre la brasserie et la société de Sylvain. Après plusieurs essais, il s’est avéré que c’était la laitue de mer qui donnait le meilleur résultat.

La saveur de cette Zwanze 2024 se distingue des goûts fruités, vineux ou floraux que l’on retrouve traditionnellement dans nos produits. La Zwanze 2024 dégage des arômes de fruits exotiques, son goût est iodé, légèrement salin, rappelant un peu l’huître. Bref, une bière fort différente de ce qu’on a l’habitude de découvrir chez Cantillon, une vraie Zwanze !

Iets meer dan een jaar geleden waren we in Bretagne om samen met Sylvain, een abalonekweker uit Finistère, enkele tientallen flessen geuze in zee onder te dompelen. Deze flessen fermenteren op tien meter diepte in het gezelschap van deze charmante weekdieren. Ze voeden zich met verschillende soorten zeewier die door Sylvain worden gekweekt.

In die tijd hadden we dezelfde zeewieren geproefd in tartaar en kwamen we op het idee om ze gemacereerd in Lambic te proberen om een link te leggen tussen de brouwerij en het bedrijf van Sylvain. Na verschillende proeven bleek dat zeesla het beste resultaat gaf.

De smaak van deze Zwanze 2024 verschilt van de fruitige, wijnachtige of bloemige smaken die traditioneel in onze producten voorkomen. Zwanze 2024 heeft een exotisch fruitaroma, een gejodeerde, licht zilte smaak die doet denken aan oesters. Kortom, een bier dat heel anders is dan wat we bij Cantillon gewend zijn - een echte Zwanze!

A little over a year ago, we were in Brittany to submerge a few dozen bottles of Gueuze in the sea as a collaboration with Sylvain, an abalone farmer in Finistère. These bottles are still fermenting at a depth of 10 meters in the company of his charming creatures.

Once a month, Sylvain brings up the cages to add various types of algae for the mollusks to feed on. We tasted these same algae in tartare during our visit, and the idea came to us to try them in maceration with Lambic to create a partnership between the brewery and Sylvain's company. After several attempts, it turned out that seaweed, specifically the sea lettuce, gave the best result.

The beer is, of course, very different from the fruity, vinous, or floral tastes traditionally found in our products. This Zwanze 2024 exudes aromas of exotic fruits; it has notes of iodine with a slight salinity reminiscent of oysters. In short, a very different beer from what we are used to discovering at Cantillon - a true Zwanze!

The first release of our Seasonal line-up is here! Green Bench IPA is now available in our Main Tasting Room and at your favorite package store across the state of Florida!

This 6.8% IPA IS our “benchmark” beer - a medium bodied ale wiht aromas of citrus, pine, and subtle notes of tropical fruit. Green Bench IPA is an American West Coast IPA brewed with Chinook, Azacca, and Simcoe hops.
