🥩🔥 Brisket Experiment Complete 🔥🥩
The brisket experiment is officially in the books... and we'd call this one a success. 😎🔥
This weekend we separated the point from the flat and smoked them independently to see how everything would turn out.
The results?
🤤 Absolutely worth it.
The flat finished beautifully. It was a little strange slicing pieces that small compared to a traditional whole-packer brisket cook, but they turned out exactly how they were supposed to. Tender, juicy, and packed with that classic brisket flavor. Even the small piece that had to be trimmed off extra ended up being some mighty fine eating.
And then there were the burnt ends...
🔥 Sticky.
🔥 Smoky.
🔥 Messy.
🔥 Loaded with flavor.
They may not be the prettiest things we've ever made, but they more than made up for it in taste. Sometimes the ugliest BBQ is the best BBQ, and these little flavor bombs definitely fit that description.
From trimming and seasoning, to rendering down tallow, to tending the smoker all day, it was a long cook from start to finish. But that's just part of the deal.
Good BBQ takes time.
And when you finally get to slice into a brisket that's been on your mind all day, every minute of waiting feels worth it.

🥩🔥 Brisket Experiment Update #2 🔥🥩
We're officially on the final stretch of today's brisket experiment 😎🔥
The brisket flat has finished cooking and is now resting comfortably in the Rest EZ BBQ Blanket, doing what great briskets do best — taking a well-earned nap before slicing time.
Before it came off the smoker, the flat was looking incredible. The bark had set beautifully, the color was exactly what we were hoping for, and the smell alone was enough to make waiting even harder.
Meanwhile...
🔥 The point is still on the smoker.
After reaching the perfect stage of the cook, we cubed it up, seasoned it with a little extra love, glazed everything down, and sent it back out to the smoker to transform into brisket burnt ends.
The pictures posted with this update are from that stage of the process — right after cubing and glazing the point before it headed back out for its final trip through the smoke.
We've also got a mountain of brisket trimmings slowly rendering down into some liquid Texas gold. Nothing goes to waste around here.
At this point, the flat is resting, the burnt ends are soaking up that final layer of smoke and flavor, and we're getting very close to the best part of the entire cook...

🥩🔥 Brisket Experiment Update 🔥🥩
The prep work is done, the smoker is rolling, and the brisket experiment is officially underway 😎🔥
This morning we loaded up:
🥩 The brisket flat
🔥 The brisket point (future burnt ends)
🧈 A mountain of brisket trimmings
Everything was seasoned with Meat Church Holy Cow and is now settling in for a long, slow ride through the smoke.
The flat will be sliced up the traditional way, while the point is destined for a much sweeter fate — getting cubed up and transformed into brisket burnt ends later in the cook.
And let's not forget about all those trimmings. Nothing goes to waste around here. They're slowly rendering down into what BBQ folks affectionately call Texas Gold — rich, liquid brisket tallow that'll find its way into future cooks and help make good BBQ even better.
Now comes the hardest part of every smoke session...
⏰ Waiting.
Just sitting back, enjoying the smell of smoke rolling through the yard, and letting time do its thing.
We'll keep y'all updated as the cook progresses and hopefully have some beautiful bark and burnt ends to show off later today.

🥩🔥 Weekend Brisket Experiment 🔥🥩
One of the things we enjoy most about BBQ is that there’s always something new to learn, tweak, and experiment with. This weekend, we’re trying something a little different with a brisket.
Instead of smoking it whole, we separated the point from the flat and will be cooking them independently.
🥩 The flat will be smoked and sliced the traditional way.
🔥 The point is getting a special treatment — we're turning the entire thing into brisket burnt ends. More bark, more seasoning, more smoke, and hopefully some downright incredible bites of BBQ goodness.
Everything has been seasoned with Meat Church Holy Cow and is currently resting in the refrigerator, soaking up all that flavor before hitting the smoker first thing tomorrow morning.
We'll be sharing updates throughout the cook and, if all goes according to plan, we'll have plenty of pictures of the finished product this time before it mysteriously disappears 😅

🥩🔥 Tomahawk Steak Recap 🔥🥩
Out of everything we had on the smoker this past Memorial Day weekend… the tomahawks absolutely stole the show 😎🔥
Unfortunately, we got so caught up cooking and eating that we completely forgot to grab pictures of the ribs, Wagyu poor man’s burnt ends, honey buns, and Wagyu tri-tips before they disappeared 😅
…but we DID manage to capture the steaks 👀
We ran three tomahawks, each a little different:
🥩 One seasoned with Holy Gospel
🥩 One seasoned with Blanco
🥩 One seasoned with classic SPG (salt, pepper, garlic)
Each steak was reverse-seared to a perfect medium rare, then finished on the stove to build a beautiful crust. During the rest period, we topped them with a homemade compound butter made with fresh garlic and chives that melted right down into the meat 🤌🔥
The end result?
Juicy, tender, smoky, and packed with flavor from edge to edge.

The smoker is going to be WORKING this Memorial Day weekend 😎🔥

🔥 This Weekend’s Smoke Session 🔥
The smoker is loaded up again this weekend and we’ve got a little bit of everything rolling 😎🔥
Here’s what’s on the pit right now:
🐟 A massive salmon filet getting turned into our signature smoked salmon bites — easily one of the biggest fan favorites we’ve made so far.
🥓🍯 More bacon-wrapped honey buns seasoned with The Holy Gospel because apparently once people try them… they don’t stop asking for them 😅
🥩 Wagyu Tri-Tip seasoned with The Holy Gospel and cooked brisket-style. This method takes a lot longer, but the end result is unbelievably tender, rich, and packed with smoky flavor.
🍖 St. Louis Style Ribs
• One half rack seasoned with Honey Hog Hot 🔥
• One half rack seasoned with Holy Voodoo 🌶️

🔥 Weekend Smoke Recap 🔥
We didn’t have any orders this weekend, so we took it as an opportunity to fire up the pit and cook for ourselves… and it did NOT disappoint 😎🔥
Everything came off the smoker looking (and smelling) incredible. Here’s how we ran it:
🍗 Chicken Lollipops
• Half with Fajita
• Half with Garlic & Herb
🥩 American Wagyu Ribeyes
• One kept classic with SPG (salt, pepper, garlic)
• One with Holy Gospel + a dash of Blanco
🥓🍯 Bacon-Wrapped Honey Buns
• Finished with Holy Gospel
The pictures don’t even do it justice — everything came out juicy and full of flavor. Weekends like this are a good reminder that even when we’re not filling orders, we’re still putting in the work and dialing things in.

🥩 This Weekend’s Smoke Plan
This weekend we’re running a little brisket experiment 👀
We’ll be smoking two full briskets from two different vendors as a quality test. The goal is to compare flavor, texture, and overall quality — and potentially introduce alternate pricing options depending on the cut and grade of meat.
