Roasted Corn - 4 cobs
Roasted and Peeled Poblano- x1
Mayo - 1/4 cup
Sour Cream- 1/4 cup
Cojita Cheese - 2 Tbsp
Lime zest - 1 tsp
Lime Juice - 1 Tbsp
Black Pepper - 1/2 tsp
Smoked Salt - 1/2 tsp
Chili Powder - 1/2 tsp
Cumin - 1/4 tsp
Fresh chopped Cilantro - 1/2 cup

Directions:
1. Cut the corn off the cob and place corn in a bowl
2. Add the remaining ingredients and stir to combine
3. Serve in small bowls and garnish with extra cheese and cilantro

We had an awesome adventure today out to Tool Texas, where we found this Gem!! Fig & Parsley, We met the GM of the restaurant/convenience store Amy and Greg the Owner of Melinda’s! They showed us around and we got some amazing food! Chef Parsley knows what he’s doing! If you’re in the East Texas area it is worth the drive!

Well well well… we did not know how many sauces Melinda’s has! Or that they were a Local Texas company! Let us tell you their Orange Marmalade is fantastic!! By far the best we’ve had!! Just goes to show why you should make time to travel and adventure even in your backyard
