This has been a tough week of crazy weather, we hope you and your gardens are hanging in there!

Fresh cilantro is ready!

One of my favorite recipes for using cilantro is fish tacos, which is great way to enjoy our Sweet Habanero Hot Sauce!

For Fish Tacos: In a glass baking pan, baste cod fillets with olive oil and sprinkle with taco seasoning. Bake in a 400 degree oven for approx. 20 minutes (1 fillet per person). After baking shred with a fork.

For toppings we use cole slaw mix, red onions, fresh cilantro, cilantro sauce and hot sauce. Enjoy in a tortilla or use rice for a taco bowl.

Cilantro Sauce:
1/2 cup sour cream
1/4 cup mayo
1/4 cup chopped fresh cilantro
Juice of a lime or 2 Tbsp.
Splash of red wine vinegar
1 clove minced garlic
1 tsp taco seasoning

Enjoy!

Update on Bernice…so she decided not to lay eggs in the hoophouse. Not sure what conditions she’s looking for but the hoophouse just didn’t suit.

Unfortunately, she decided to take a shortcut through the garden to get back to the pond and found the way blocked. Andy cut the fence & was able to video her making her way back home.

Later on while mowing, Andy came across another turtle! Pretty sure this one is red-eared slider. Smaller than Bernice but still rather large…meet Bernadette!

It’s never dull around here!

Andy had a visitor yesterday…meet Bernice. She’s a rather large snapping turtle that ventured from our pond to the warmth of the hoophouse to presumably lay a clutch of eggs!

Over the years we’ve caught glimpses of a large turtle in the pond but discovered yesterday there are actually 2! We’ve had a lot of animal activity this season, including 3 green herons, a family of snakes and now this. We’ll keep you posted!

Our Spring Forage Vinegar is ready! When we say food is medicine this is what we mean. Violet Leaf & Flower: contains vitamin C, beta-carotene, soluble fiber & soothing to the urinary tract.

Purple Dead Nettle: contains vitamin C, iron & fiber

Garlic: antibacterial & anti-fungal properties, high in antioxidants, detoxifying

Chives: contains vitamin K & antioxidants
