Keep your belly happy with this gut friendly Cinco de Mayo staple.
🌽Corn and Bean Salsa 🌽
Ingredients:
1 can sweet corn drained and rinsed
1 can black beans drained and rinsed
1 small red onion dice
Small colorful peppers diced to taste
Grape tomatoes or 12oz can diced tomatoes drained and rinsed
½ cup white vinegar
¼ cup olive oil or light tasting oil
1 tbsp. Lime juice
½ McCormick mojito lime packet (or favorite Mexican spices)
Directions:
This is a super quick rinse drain mix and spice kind of recipe.
Drain and rinse all of your canned goods. I rinse well with Hot water. You can also heat your canned goods in the microwave for minimum of 3 minutes for extra food safety.
Dump all ingredients in a bowl, season well, mix and store in the refrigerator.
Serve cold.

Simple delicious Cinco De Mayo ready Brunch!
🍞🥑This month I am having an obsession with toast.🍞🥑
Crunchy, chewy, carb-y and super satisfying.
Todays recipe couldn’t get easier grab your favorite bread🍞🥖🥐 and smash some 🥑 avocado on it or use my guacamole recipe below.
Guacamole
10 minutes 4 servings
Everything gets smashed and mixed in the same bowl. Let’s get smashing!
🥑3 avocados, ripe
🧅½ small yellow onion, finely diced
🍅½ cup fresh salsa or pico de gallo)
🧄2 garlic cloves, minced
🍋1 lime, juiced
🧂½ teaspoon sea salt
Assemble Avocado toast with your favorite toasted bread, generously spread with guacamole, followed by a lush handful of microgreens, add a fried egg 🍳for protein and garnish with everything bagel seasoning and siracha 🌶to add color and spice. Happy Cinco De Mayo Enjoy Brunch!
