With the recent holiday season, I'm not ashamed to admit I fell ALL the way off the wagon!! But this quick lunch is helping me get back on track! Mash an hass avocado with a little minced garlic, chopped green onion, a little lime juice along with salt & pepper and set aside. In a separate bowl mix a pouch of tuna (i used bumblebee brand jalapeño flavored) with a chopped boiled egg, black pepper & a little mayo. I then layered the avocado mixture on wheat toast with sliced tomato, some feta & then the tuna salad. This came out sooo good!
