The secret to making the best tasting air fryer chicken cutlets, is marinating them quickly with Italian dressing and seasoning before breading and air frying – my family loves them! I also add Parmesan cheese and Italian seasoning to the breadcrumbs for extra flavor, so good!

Things you need

For the base

1 cup of quinoa

Two cups of vegetable broth or water

A pinch of salt

Toppings

1 cup of cooked black beans that have been rinsed and drained

½ cup of sweet corn kernels

1 tomato, chopped

½ avocado, cut into pieces

2 tablespoons of finely chopped red onion

2 tablespoons of chopped fresh cilantro

1 lime, cut into pieces

Lime Dressing Simple

2 tablespoons of olive oil

1 tablespoon of fresh lime juice

½ tsp garlic powder

Salt and black pepper to taste

How to do it

Wash quinoa in cold water. Put the quinoa, water, and salt in a saucepan. Bring to a boil, then turn down the heat and let it simmer for 15 minutes, or until it is fluffy.

Use a fork to fluff the quinoa and let it cool down a bit.

Put the quinoa in a bowl as the base.

Put black beans, corn, diced tomato, avocado, and red onion in different parts of the bowl.

Add some fresh cilantro on top.

Mix the olive oil, lime juice, garlic powder, salt, and pepper together in a bowl, then pour it over the top.

Add fresh lime wedges to the dish for an extra burst of flavor.
