Our submission for the competition (think Legomasters without Will Arnette): farro risotto with a spinach salad enriched with broccoli florets, apple, diced apples, black beans and chick peas with a homemade miso dressing. Re-learned how easy and more tasty it is to make small batch dressings. Unfortunately we didn’t make it to the finals but was great team building.

Attending Obesity Medicine 2024 and starting off with two days of culinary medicine. There are so many great foods and resources available. It’s not about what you can’t eat, it’s about building the diversity of all the wonderful foods that are available.

I’ve been working through incorporating more fruits and vegetables into my diet over the past few months. One vegetable that I struggled with was beets. However, I have found that this beet risotto recipe has made for a very tasty dish. I do replace the wine with water and will use onion for the shallot if that is what I have at hand.
