Honduras 🇭🇳 Finca Cual Bicicleta 🫘

Parainema Natural is harvested selectively, with only fully ripe Parainema cherries being hand-picked at peak maturity. After careful sorting and flotation to remove underripe and defective cherries, the whole fruits are transferred directly to raised beds, where they are slowly dried under carefully controlled conditions.

The natural process enhances the vibrant character of the Parainema variety, creating a cup with remarkable sweetness, a creamy body, and lively acidity. Alongside the bright citrus and floral notes often found in washed Parainema, this process develops deeper flavors of tropical fruits, wild berries, honey, and ripe stone fruits, resulting in a complex, juicy, and well-balanced cup with a long, elegant finish.

Guatemala 🇬🇹 Ch*****ne ✨

The Natural Ch*****ne Yeast Process begins with the careful selection of fully ripe cherries, followed by a resting period before a 120-hour anaerobic fermentation using selected Ch*****ne yeast. Throughout fermentation, temperature and other key variables are carefully monitored to promote a clean and controlled microbial environment. Rather than masking the coffee’s identity, this process enhances its natural expression, resulting in greater sweetness, lively fruit character, bright acidity, and remarkable clarity in the cup.

After fermentation, the cherries are slowly shade-dried on raised African beds for approximately 30 days or longer, depending on weather conditions. They are turned frequently to ensure even drying and to preserve quality throughout the entire process.This combination of controlled fermentation and slow drying produces coffees with excellent stability, refined complexity, and a vibrant, elegant profile that faithfully reflects the unique conditions of Finca La Senda in Acatenango, Guatemala.
