The Karan-unon Convention features local delicacies from the province of Iloilo. This is to be followed by a "rampa" (ramp-modeling showcase) of patadyong, denim, and others. Hence, "Karan con Rampa".

Maโam Anita or Manang Anet is the renowned baye-baye and kalamay hati maker in Miagao, Iloilo. Learning the recipe from her mother, she has been making baye-baye since she was nine years old. Her baye-baye, which is actually toasted glutinous rice ground with a generous amount of delicious bukayo-on or sweetened young coconut meat. What makes her baye-baye special is its fine texture and taste. Her kalamay hati is equally popular too. This sweet, gooey delicacy is made from ground glutinous rice, muscovado sugar and coconut milk.

The baye-baye and kalamay-hati in Miagao come in traditional banana leaf packaging, color coded. Maโam Anita shares that the light green leaf is for baye-baye and the dark green is for kalamay-hati.
To this day, she operates her kakanin stall at the Miagao public market from 6:30 AM to 5:00 PM daily, selling baye-baye, kalamay-hati and other locally made delicacies to her customers' delight.

RONEL TANGENTE ๐ฅ

Ronel Tangente is one of the local artisans behind the arduous creation of Tigbauanโs rare kalamay sa buri. The process behind the making of this sweet treat is passed down from their Tangente elders who had been making this delicacy for over 50 years.
Kalamay sa buri is a seasonal treat. It can only be made during the summer when the makers can harvest the sap of the buri tree. This collection takes place every 4 to 5 hours. The juice is then cooked until it reaches the correct consistency and turns into a kalamay.

Kalamay sa buri is sweet with a nutty flavor and has the consistency of hard candy when cooled. Its flavor is sometimes likened to bukayo/bocarillo without the coconut strips. This sweet treat is often enjoyed with rice or as a pangyam-is (akin to dessert) after a meal.

Mrs. Evangeline Baladjay has been cooking ibos for the past 28 years. She has a stall at the Guimbal Public Market where she sells ibos and other rice cakes like p**o, tikoy and suman.

Her secret? Not scrimping on pure coconut milk when boiling her ibos. Also, there is a homemade pulot she provides for special orders. Most market vendors in Guimbal recommend Manang Didingโs ibos for people looking for a delicious rice cake. She receives a lot of orders during fiestas too. Manang Didingโs passion and dedication to her craft paved the way for her two children to finish college.
