Every time I’m at the airport, I find myself looking at the passengers from afar. Minsan napapaisip ako, “Ano kaya ang nasa isip nila?” “Saan kaya sila dadalhin ng mga pangarap nila?” At sa totoo lang, I also ask myself the same questions.

We don’t know what the future holds… but that’s exactly what makes it beautiful. The future is uncertain, and because of that, we always have the power to change it.

Yesterday, my wife brought me to a local Chao Long spot here in Puerto Princesa City. I honestly told her that Chao Long has never been my cup of tea… my first encounter with that soup years ago wasn’t exactly memorable.

But to my surprise… this one completely changed my mind.

The handmade noodles had a firmness that gave it a perfect “al dente” bite, the beef ribs and brisket were so tender they were practically falling off the bone, and the broth…wow! Very rich, flavorful, and comforting. I ended up finishing an entire bowl without even realizing it.

And yes, I’m already planning to go back soon.

Highly recommended! If you’re in Palawan, make sure to stop by Rene's Saigon. Trust me, it’s worth it.

As a chef, I always wear the Philippine flag on my jacket beside my name — a small reminder of where I come from and what I stand for.

I once owned and operated a Filipino restaurant, and I’ve always believed that our food — rich in culture, heart, and soul — can compete proudly on the world stage.

I may not have a Michelin star (yet), but who knows what the future holds.

FOOD REVIEW: Hidden Gem in Bangkulasi, Navotas! HOOYY by Eyang’s 😊

I discovered a small and quiet food spot tucked away in Lacson St. Bangkulasi, Navotas (Beside BDO) — and I have to say, this one’s a game-changer. 😊

They serve large baby back ribs for only Php 189, and as a professional chef, I can honestly say: the taste is on point! The ribs are tender, flavorful, and generously portioned — far beyond what you’d expect at this price point. It’s rare to find something so affordable that doesn’t compromise on flavor or quality. 😊

What’s even more impressive? They do deliveries, and according to the staff, they regularly get orders all the way from Parañaque and other parts of Metro Manila. That says a lot about how good their food is.

If you’re in Navotas, Malabon, Tondo or anywhere nearby, this place is definitely worth checking out.
