Authentic Sourdough, a naturally leavened bread, uses a fermented flour and water to make the bread rise instead of commercial Instant Yeast. I do 36 hours of fermentation, allowing the bread to involve wild yeasts and good bacteria that is already available in our environment, giving the bread a distinct tangy flavor, chewy texture and crispy crust, and high potential health benefits.
