Mayon Volcano cake!

Since 2014, I've waited for someone to ask me to make a cake inspired by the iconic and world-famous Mayon Volcano. I even offered to make one for big festival celebrations like Magayon Festival and other major events. Until I met Ms. Jho Nuñez, owner of the newly opened Eruption Bar and Club at Terminal 2 in Albay.

I would have wanted to add some smoke but dry ice is not available here so I used sugar instead. If you look at the volcano, it has patches of black, brown, dark gray and greens. I used those colors and made a marbled effect on some parts, the others I airbrushed with black and gray. The cake itself is made with carved alternate layers of red velvet and chocolate cake with chocolate buttercream and cream cheese filling. For the thin edges of the base, I used the cake trimmings from carving and mixed it with cream cheese filling and a little bit of rice krispy treats for the ridges.

This cake was served at the grand opening of Eruption Bar and Club at Terminal 2 last Saturday, September 14, 2019. Congratulations on the start of your business and thank you for making me a part of your special event!
