PAKO ENSALADA +FRESH BUCO: FARM to TABLE TODAY AT ZEN TIERRAS FARM!!!

Today’s harvest: young fiddlehead fern - pako - picked from the shaded slopes under the canopy. We blanch the tight curls, then toss with tomato, red onion, garlic, vinegar, and calamansi from the farm. Crisp, earthy, clean.

Paired with buko cut fresh from the coconut trees beside the trail. Cracked open on the spot, chilled in the cool air. Sweet coconut water + soft meat to balance the tang of the pako ensalada.

FARM to TABLE

Harvested → prepared → served to guests today. Minutes from plant to plate.

It tastes like the farm: cool shade from the trees, clean water from the land, food that doesn’t travel.

Cool Morning at Zen Tierras Farm

Mornings here arrive quiet.

Before the sun climbs over the Sierra Madre, the air is cool and clean. Mist hangs low between the coconut and narra trees. You hear birds first - not traffic. Just soft calls moving through the canopy, and the rustle of leaves when the breeze comes down from the hills.
