🇧🇻 BOOK: 17 Mai på Tango- Alle gjester som bestiller bord hos oss denne dagen får en smak av vår klassiske vaffel med ekte stør kaviar fra Antonious på huset, med mulighet for å bestille mer.

Vi har kortere seatingtid og satt sammen en kortere festmeny med sesongens råvarer, friske smaker og det lille ekstra som hører nasjonaldagen til.

Duck from Holtegård, dry-aged on the crown and gently roasted through the evening, finished over charcoal for a delicate smokiness. Served with a light duck ju infused with Madeira, sake, grilled duck fat and a touch of mustard.

A dish designed to share-

Turbot from Kvinesdal. Panfried in butter & aromatics. For Garnish we have a variation of Pumpkin filled with Tarragon oil and yuzu citrus. The sauce is made out of fermented gooseberries & finished off with some yuzu sake.

Three new additions to our alcohol free pairing in 💫

From left to right in the glasses:
1. Green Champagne flower tea infused with bergamot orange, elderflower & kombu

2. African roiboos with rose pepper, orange and clove infused with rasberry juice & kaffir lime

3. Yubi tea with cardamom infused with blueberry juice & dried orange

On picture nr 2 they are in the same order climbing from bottom step towards the top.

We take great proud in our alcohol free pairing, were we create this as a team along with the kitchen, to get the perfect balance with our courses.

We couldn’t be prouder of our talented Chef, Runar Helgeland, who’s made it to the finals of the Arctic Young Chef competition, happening this weekend! 🇳🇴

In the Norwegian semi-final, Runar’s dishes wowed the judges with their flawless ex*****on and masterful technique. Each dish was a true work of art—flavorful and visually stunning.

Indulge in our exclusive Gladmat dish: Norwegian king crab and langoustine from Haugesund. Savor the crab salad with broccoli stems and dill in a crisp puff, complemented by broccolini and sprouts. All brought together with a sea buckthorn beurre blanc “Kosho.”

**About Tindved Kosho:**
Tindved (sea buckthorn) are fantastic small orange berries often found along the coast, perfect for both sweet and savory dishes. Kosho, a common Japanese condiment typically made with chili and citrus, is our special creation using red chili and tindved, fermented for 4 weeks before Gladmat.
