Behind Bars
Our vision at Behind Bars is simple: To create better bars. Founded by Alex Ruas and Sam Millin

A custom Tayēr frontline developed for Il Salotto, a contemporary restaurant and cocktail destination in Zoppola, Italy. Created in collaboration with interior designer Marta Gover and owner Luca, the project places the bar at the center of the guest experience, blending refined hospitality, thoughtful design, and seamless integration within the space.

Hospitality rarely happens in one fixed spot.
Eva was designed around that movement.
A mobile trolley developed to support service naturally, whether for guest interaction, mise en place, prep, or tableside moments.
Built in stainless steel and configurable in a wide range of finishes, Eva adapts easily between venues, concepts, and atmospheres.
A working tool shaped around hospitality.

LENLEN, NYC
A restaurant disguised as a living room.
A frontline bar designed around the pace of the room.
A late-night space built for movement, conversation and long stays.
Guests move through shelves of Thai pantry goods before reaching the dining room, where the bar sits directly at the centre of the space. Everything happens from a single frontline: service, storage, refrigeration, glassware and workflow, all integrated into a custom Paloma double station designed specifically for the constraints of the venue.
The result feels less like a traditional restaurant and more like a shifting Bangkok night scene inside Manhattan.

As terraces fill up and venues spill outdoors for the summer season, Alma is designed to move with the pace of hospitality. A portable bar system that brings the functionality of a fixed station into flexible environments.
Available as a Drinks Unit, Draft Unit, and Back Bar Unit, each configuration is designed to work independently or together depending on the setup.
Simple to place. Easy to adapt. Ready when needed.

Beneath Svanen, D.G.Æ. [Den Grimme Ælling] occupies the former basement laboratory of a 19th‑century apothecary.
Acting as a counterpart to the historical bar above, the space leans into a more experimental, future‑facing identity.
Subtle references to science and taxonomy shape an interior developed by Julia Filippova, where a lab-like atmosphere blends with softer, more organic elements.
The bar itself consists of a fully bespoke dual setup based on the Tayēr system. Completely adapted to the spatial constrains and workflow of the venue, it is structured around a central island paired with a front line counter. A multidirectional brush finish on the steel completes the raw and unconventional atmosphere.
Not a departure from Svanen, but another layer of the same story, told at a different pace.

SíSí Rooftop at The Social Hub Barcelona is a rooftop bar and restaurant in Poblenou, built around a more open and social setting, with drinks, food and music moving through the space from day into night.
As part of this project, the Eva trolley was introduced as a mobile station within the setup. A compact steel frame designed to move through the room and support a more flexible way of serving.
For SíSí, developed a series of coasters using recycled plastic. Their work focuses on collecting waste material, cleaning it, and reshaping it into durable sheets where layers, colour and variation remain visible.
That material became the starting point for the trolley.
The result is a set of custom cover plates, set against the steel frame, bringing a different material language into the setup.
A collaboration that opens up how surfaces can be approached and one we really enjoyed working on.

Terronia brings a slower, more intentional way of experimenting drinks.
Inspired by a European piazza, the venue anchors itself around a fountain and a bar with and open layout that invites conversation. The drink program is elaborated in-house by founder Mycol Cavalieri with a strong focus on balance and fresh ingredients that are often grown on site.
There’s no rush here. The pace is part of the experience.
Behind the bar, a single Tayēr system keeps the workflow grounded. The first of its kind installed in Australia.

What started as sketches and prototypes on the production floor is almost ready to make its way into the world.
The Behind Bars tray set is our first standalone Lab product. We’ve been testing it in a couple of settings, imagining how you’ll use it, where it’ll go, and the moments it’ll become part of.
Early access for the very first batch is now available through our pre‑release list.
